I promised you some pie recipes. I’m going to the kitchen and make some lip smacking’ pies that you are sure to enjoy. Some of the best pie recipes I’ve come across are in BIG SPRINGS BAPTIST CHURCH’S “PLEASURES FROM THE GOOD EARTH” cookbook. The very first pie I’m going to make is the all time favorite. When I was just a little boy, our next door neighbor taught me this saying: “Apple pie without cheese is like a kiss without a squeeze!”. He loved a piece of cheese with his apple pie. Every time I make apple pie, I think of him and his wife. Let’s get started with the simplest apple pie recipe I’ve ever come across. Here is CHRIS HAMRICK’S recipe. biscuit dough 3/4 cup sugar 3/4 stick butter Granny Apples peeled and sliced (about five or so) Make regular biscuit dough and refrigerate overnight. Roll dough out and put bottom crust in pie pan. Sprinkle lightly with flour. Put sliced apples on top of bottom crust. Add the sugar and butter. Roll out top crust and put on top and crimp all around. Cut slits in top to let out steam. Bake at 350º until golden brown. Brush with butter on top when it comes out of oven. (Tip: I put my pie in a 400º oven on bottom rack for 10 min- utes and then moved to the middle rack and reduced the temperature to 350º. This gave the bottom crust a nice firmness. Also, if your top crust is getting golden the way you want it and you want to continue baking the pie, place a full sheet of aluminum foil on top of the pie. This keeps the top crust from burning. It works every time!) This recipe is very simple. Here I go with the next recipe. It’s GLENDA SCRUGGS’ CHOCOLATE CHESS PIE! Ummmm! 3 tablespoons cocoa 1 cup sugar 1 stick melted margarine (I used butter) dash salt 2 eggs, beaten 2/3 cup evaporated milk Mix ingredients in order as listed. Mix well and pour into unbaked pie shell (deep dish). Bake at 350º for 30-35 min- utes. Take out of oven and let set. If you have never made a cobbler and love them, allow me to share this time tested recipe. This is offered by ANNA HARDIN. Easy to remember - CUP-A CUP-A COBBLER! Everything is one cup and it works all the time. 1 cup sugar 1 cup flour 1 stick butter 1 cup fruit - your choice 1 cup milk Mix all together and pour into a greased baking dish. Bake at 350º until golden brown. This is simple and very good. That’s it for this week. I’ll continue making pies next week. Meanwhile, like I always say, get in the kitchen and show the love!
