By Karen Rice Official Kids Mag There are so many good "greens" to look for in the produce section of your local Harps Market. And they're not even all vegetables! How about green nuts – pistachios? Or a green fruit – kiwi? There are a lot of great, green choices out there!!! Here are some recipes from our friends at apple seeds teaching Farm in Fayetteville. Try them at home for some yummy "green" eating! March is national celery month! Everyone knows celery. You might say celery is a vegetable celebrity! You can celebrate celery month in March by crunching on a stalk or two! Celery was first discovered thousands of years ago in the Mediterranean area. It was believed to have healing properties and was used by the Chinese as medicine to treat toothache, insomnia, anxiety, arthritis and other ailments. some celery facts to crunch on: Bouquets of celery were given as rewards to winners of athletic games in Ancient Greece. Celery can reach a height of 3.3 feet. That's one big stalk! Celery is an excellent source of vitamin K, vitamin C, plus lots of other vitamins, minerals and fiber. Of course, celery is a great defensive weapon in…celery wars! Use your celery stalk as a sword, and whoever's celery stalk breaks first, loses the game. Win or lose, you can eat your weapon for a healthy snack! ants on a Log Of course, we couldn't talk about celery without mentioning everyone's favorite after-school snack: ants on a log! Fill the hollow side of celery "log" with peanut butter and top with raisin "ants." OR, experiment with different ingredients! Instead of peanut butter, try almond butter, cream cheese, cottage cheese, hummus, or mashed avocado! For your "ants," try other dried fruit, berries, grapes, olives, peas, seeds or nuts! • ants on Vacation: no "ants," just filling • ants on a slip 'n slide: put a layer of honey on top of the peanut butter • Ladybugs on a Log: strawberry cream cheese and dried cranberries • Peas in a Pod: cream cheese and peas • snakes in the Grass: almond butter and almonds • Fish in a stream: hummus and goldfish crackers • Monkeys in a tree: peanut butter and banana slices • Beans on a stalk: mashed avocado and black beans • Beetles on the Beach: hummus and olives • Frogs on a Log: peanut butter and walnut halves It's not easy being green but it IS easy Prep time: 10 min serves: 4 ingredients: • 1 cup zucchini, diced • 1 1/2 cups kale, stems removed • 1/4 cup spinach • 1/2 lime, juiced • 1 1/2 bananas • 3 cups frozen mango • 2 cups water instructions: 1. Dice zucchini into 1/2 inch chunks. 2. Rip kale and spinach into pieces. 3. Juice 1/2 of the lime. 4. Add all of the ingredients to a blender, frozen ingredients last. 5. Blend on high for 30-40 seconds until smooth and enjoy! super Green Mango smoothie Frozen fruit makes for the best smoothies!
