Spring Rolls Tailor these fresh rolls to suit your tastes. v 1 lb shrimp and/or chicken, cooked and sliced thin v 1 cucumber, chopped v 1 carrot, chopped v Iceburg lettuce v Fresh lemon or lime juice v Fresh red chili v Fresh mint *Fish sauce *Rice noodles, cooked *Rice paper *Three Ladies rice paper rolls plus thin rice noodles and fish sauce may be found in most Asian food stores. Combine meat with vegetables and desired amount of chopped lettuce. In a shallow bowl or pie plate of warm (not hot) water, add juice, finely-chopped red chili, fresh mint and fish sauce to taste. Dip sheets of rice paper one at a time into the mixture and lay out on a clean counter or plate. Top with vegetables, meat and noodles then roll. We like potatoes. v 2 cups flour v 1 teaspoon salt v 1 egg v 2/3 cup cold water v 4 large cooked potatoes v 1 large onion, chopped v ½ cup vegetable oil v Salt and pepper First make dough by mixing flour and salt. Add egg and water. Knead lightly. Cover with kitchen towel and set aside. Meanwhile, mash potatoes. Sautée onion in hot oil then add to potatoes. Season with salt and pepper to taste. Cool. Once dough has risen, roll it out thin. Cut rounds with inverted water glass. Hold a round in your palm, place spoonful of filling in center. Fold in half, pressing edges to seal. Lay on dry kitchen towel and cover. Repeat. Drop filled rounds into large pot of boiling water, a few at a time. Boil rapidly for about 4 minutes. Drain and rinse with hot water. Drain again.
