Sushi The nice thing about this recipe is that it can be easily expanded to serve as an appetizer for a large group or gathering. v 5 cups rice v Sushi vinegar v Japanese mushroom v Soy sauce v Sugar v Dried gourd shavings v Japanese sake v Spinach v 1 egg v Fish cake* v Nori (seaweed wrap) *You may buy fish cake at any Asian market. Already prepared, it is called kamaboko. Prepare rice according to package directions, five cups of rice to five cups water and immediately mix with vinegar. Then place dried mushroom in water and soak until soft then remove and mix with soy sauce, sugar and water to taste and boil. Repeat the process with gourd shavings, adding sake. Blanch the spinach. Fry the egg like an omelet and slice. Slice the mushroom, dried gourd, spinach, fish cake and egg.
