Even though it's winter, Mike Roberts, who's the Director of Produce Operations for Harps Food Stores, says "We have a great selection of fresh fruits and vegetables year round!" That's because they are flown in from farms all around the world and delivered to the store in just days. They also offer locally grown produce when it's available to support our local farmers and communities. Mike has also been working on ways to reduce food waste, something readers of Official Kids Mag know is important! One way Harps is doing that is by using a company that picks up the fruit and vegetable waste and turns it into compost! Harps is all about healthy eating for everyone. It's a new year and a great time to resolve to eat more fruits and veggies! Come on! Not only are they good for you, but they're colorful and crunchy and you just might like them more than you think! Here are some yummy recipes from our friends at Apple Seeds Teaching Farm in Fayetteville. You can use any veggies that you like with these recipes! Explore! Experiment! Create your own food masterpiece! Try making your own "plant person" or make funny faces on a plate using real fruit and veggies! Then gobble them up!! Watch the video: Mini Veggie Frittatas - https://youtu.be/tQcZrza8iyo ingredients • 12 large eggs • 1 large bell pepper • 1 cup of packed kale or spinach • 1/2 cup milk or milk alternative • 1/2 cup of shredded cheese (optional) •1/8 tsp salt (a big pinch!) • 1/8 tsp pepper (a big pinch!) • oilive oil or muffin liners instructions 1. Preheat oven to 375 º F. 2. Coat muffin tins with olive oil or use muffin liners. 3. Dice the bell pepper into 1/4 inch chunks. 4. Cut spinach or kale into ½ inch strips. 5. Whisk the eggs, milk, salt and pepper until well combined. 6. Divide the egg mixture evenly between the muffin tins, filling them about halfway. (They will rise in the oven!) 7. Top evenly with the veggies. 8. If adding cheese, sprinkle a little on top of each. 9. Bake for 20-25 minutes or until egg mixture sets. **To test if they are done, insert a toothpick or butter knife into the middle of one- if it comes out clean, they are done!** 10. Let cool 5 minutes before serving. Make a batch on the weekends and freeze for an easy breakfast all week.
