of her fondest childhood memories were
watching her mother making this cranberry
relish during the holidays.
"is was before she had a food processor,"
Gambill said. "We had a food grinder
that she would clamp onto the side of the
kitchen table, and she would hand grind the
cranberries and apples and oranges. Now, I
can quickly mix the ingredients in my food
processor. It makes me appreciate the effort
it took her. e holidays aren't complete
without this dish on my table."
MOM'S CRANBERRY RELISH
½ cup sugar
1 6-ounce box cherry Jell-O
1 20-ounce can crushed pineapple
1 package fresh cranberries
½ cup finely chopped nuts
2 to 3 finely chopped apples
1 cup finely chopped celery
1 orange
1 to 2 tablespoons lemon juice
Combine pineapple and sugar in
saucepan and bring to a boil. Remove
from heat and add dry Jell-O. Mix until
dissolved. Grind cranberries and orange,
including rind. Add all ingredients and
add lemon juice to taste. Refrigerate.
