SWEET POTATO PUDDING 2 cups boiled and mashed sweet potatoes 1 cup self-rising flour (Gluten-free Bisquick works also) 2 eggs 1 teaspoon vanilla ½ teaspoon nutmeg ½ teaspoon cinnamon 1 cup sugar 2 tablespoons melted butter 1/3 cup milk Mix all ingredients and bake in a 9-by-13 dish at 350 for 30 to 40 minutes, until edges begin to brown JUDY HARRISON makes this special Italian Cream Cake for holidays and for friends, who always love it. ITALIAN CREAM CAKE 1 stick butter ½ cup Crisco 2 cups sugar 5 egg yolks 1 teaspoon baking soda 2 cups plain flour 1 cup buttermilk 1 teaspoon vanilla 1 cup chopped pecans 1 cup coconut 5 egg whites, beaten Cream butter, Crisco and sugar until creamy. Beat in egg yolks. Sift soda and flour and add alternately with buttermilk to egg and sugar mixture, starting and finishing with flour. Add coconut, nuts and vanilla. Fold in beaten egg whites. SWEET POTATO SOUFFLE 1 large or 2 small baked sweet potatoes 4 eggs, separated 1 cup sugar 1 stick melted margarine 1 12-ounce can evaporated milk 1 teaspoon vanilla Mash potatoes, then add sugar. Add butter, vanilla, egg yolks and milk. Add stiffly beaten egg whites. Bake at 350 degrees for 45 minutes. Pour well-mixed batter into three 9-inch grease and floured pans. Bake at 350 degrees for 25-30 minutes. Do not overbake. Frosting 8 ounces cream cheese, softened 2 sticks butter 1 box powdered sugar 1 teaspoon vanilla Beat together until creamy.
