june 20-26, 2021 What's up! 47 A slice of summer try theserecipes Refreshing watermelon recipes to beat the heat Watermelon Fire and Ice Salsa Ingredients • 3 cups chopped watermelon • ½ cup chopped green bell pepper • 2 tablespoons lime juice • 2 tablespoons chopped fresh cilantro • 1 tablespoon chopped green onions • 1 tablespoon chopped jalapeno pepper • ½ teaspoon garlic salt Directions 1. In a large bowl, combine the watermelon, green bell pepper, lime juice, cilantro, green onions, jalapeno and garlic salt. Mix well and serve. Julia's Watermelon Gazpacho Ingredients • 6 cups cubed seeded watermelon • 2 English (hothouse style) cucumbers, chopped • 2 red bell peppers, chopped • 1 onion, chopped • ½ jalapeno pepper, finely chopped • ¼ cup lemon juice • 2 tablespoons olive oil • 3 tablespoons chopped fresh mint • 2 tablespoons minced fresh ginger • 3 tablespoons honey • ½ cup pineapple juice • 20 small mint leaves Directions 1. Reserve 20 small pieces of watermelon for garnish. Working in batches, place the remaining watermelon, the cucumbers, red bell peppers, onion, jalapeno pepper, lemon juice, olive oil, 3 tablespoons of fresh mint, the ginger, honey, and pineapple juice into a blender, and blend for about 30 seconds per batch. The mixture should be well blended but retain some texture. Pour into a large pitcher or bowl, and refrigerate 1 hour. Serve in bowls, and garnish each bowl with a couple of chunks of the retained watermelon and 2 small mint leaves. Sweet and Peppery Watermelon Salad Ingredients • 4 cups arugula • 3 cups sliced fresh strawberries • 3 cups diced seedless watermelon • ¾ cup thinly sliced fresh basil (Optional) • ¼ red onion, very thinly sliced • 1/3 cup extra-virgin olive oil • 1 ½ tablespoons balsamic vinegar • 1 teaspoon agave nectar • salt and ground black pepper to taste • ½ cup crumbled feta cheese, or more to taste Directions 1. Gently combine arugula, strawberries, watermelon, basil, and red onion in a large bowl. 2. Mix olive oil, balsamic vinegar, agave nectar, salt, and pepper together until dressing is uniform. Pour over salad; top with feta cheese. Cook's Note: You can substitute honey for the agave nectar, if you prefer. Courtesy allrecipes.com
