DECEMBER 27, 2020-JANUARY 2, 2021 WhAt's Up! 47 Ring in 2021 with lucky dishes featuring black-eyed peas Luck for the new year try theserecipes Lucky New Year's Black-Eyed Pea Stew Ingredients • 3 tablespoons vegetable oil • 1 onion, chopped • 2 cloves garlic, minced • 3 cups finely shredded napa cabbage • 1 (8 ounce) can sliced water chestnuts, drained • 1 pound ham hocks • 1/8 teaspoon cayenne pepper • 2 bay leaves • ½ teaspoon Cajun seasoning • salt to taste • 1 quart chicken stock • 1 (10 ounce) package frozen black-eyed peas • 1 ½ cups basmati rice, well rinsed • 3 cups water Directions 1. Heat the oil in a deep pan or stockpot set over medium-high heat. Stir in the onions and garlic, and cook until transparent, about 5 minutes. Mix in the Napa cabbage; toss and cook until wilted, about 2 minutes. Add the ham hocks, cayenne pepper, bay leaf, Cajun seasoning, and salt, stirring for 2 minutes more. Pour in the chicken stock and black-eyed peas. Bring the mixture to a boil, then reduce heat to low and cook uncovered for 2 hours. 2. Meanwhile, place the rice and water into a saucepan. Bring to a boil, reduce heat to low, cover, and simmer until all liquid is absorbed and rice is light and fluffy, about 20 minutes. 3. Before serving, remove the ham hocks from the pot. Coarsely chop the meat, and return to the black-eyed pea mixture. Serve hot over Basmati rice. Black-Eyed Pea Gumbo Ingredients • 1 tablespoon olive oil • 1 medium onion, chopped • 1 medium green bell pepper, chopped • 5 stalks celery, chopped • 2 cups chicken broth • 1 cup brown rice • 4 (15 ounce) cans black-eyed peas with liquid • 1 (10 ounce) can diced tomatoes and green chiles • 1 (14.5 ounce) can diced tomatoes • 2 cloves garlic, finely chopped Directions 1. Heat the olive oil in a large saucepan over medium heat, and cook the onion, pepper, and celery until tender. Pour in the chicken broth, and mix in rice, black- eyed peas with liquid, diced tomatoes and green chiles, diced tomatoes, and garlic. Bring to a boil, reduce heat to low, and simmer 45 minutes, or until rice is tender. Add water if soup is too thick. New Year's Soup Ingredients • 1 tablespoon extra-virgin olive oil • 2 cloves garlic, crushed • 1 small onion, chopped • 2 carrots, peeled and sliced • 3 leaves collard greens, coarsely chopped • 1 (14.5 ounce) can vegetable broth • 1 (15 ounce) can black-eyed peas, rinsed and drained • ½ cup quinoa • 1 cup water • 1 tablespoon cider vinegar, or to taste • salt and ground black pepper to taste Directions 1. Heat olive oil in a soup pot over medium heat; cook and stir garlic until it begins to brown, about 3 minutes. Add onion and carrots. Cook and stir until carrots begin to brown and onion becomes translucent, 7 to 8 minutes. Cook and stir collard greens into onion mixture until wilted, about 5 minutes. 2. Pour vegetable broth and black-eyed peas into vegetables, bring to a boil, and reduce heat to low. Cover and simmer soup until vegetables are softened, 20 to 25 minutes. 3. While soup is simmering, mix quinoa and water in a saucepan, bring to a boil, and reduce heat to low. Cover and simmer until the water has absorbed into the quinoa, about 10 minutes. Stir cooked quinoa into soup and simmer until collard greens are tender, about 10 more minutes. Stir cider vinegar into soup to taste and season with salt and black pepper. Courtesy: allrecipes.com
