MARK GOFF Mark R Goff passed on November 16, 2020. He was born on June 22, 1951 to Al Goff and Helen Noblitt. He is a former resident of Colum- bus. He liked camping, fi shing and travelling. He was a meat-cutter for Jay-C for 30 years. And he and his wife, Brenda owned Coyote Fresh Foods grocery store in Quartzsite, Arizona. Mark is survived by his wife, Brenda;Son, Randy (Kayla) Goff; daughter, Julie Goff; step-son, Der- rick Foster; brothers, Phil (Nancy) Goff, Tim (JoAnna) Hooten; Sis- ter, Tina (Howard) Bowman; fi ve grandchildren; and many nieces and nephews. He was preceded in death by his parents; sisters, Sherry Hesser and Barbara Barns. A Celebration of life will be held next June at Hefl in Park, Colum- bus, Indiana. In Memoriam Nancy's Kitchen Mandarin-Pineapple Pork and Snow Peas 1 bag boil-in-bag white or brown rice 12 oz. boneless pork chops or pork tenderloin, cut into thin strips ¼ cup plus 2 Tbsp. less sodium soy sauce, divided 3 Tbsp. cornstarch, divided 1 can (15.25oz.) Pineapple Chunks in 100% Juice 2 Tbsp. vegetable oil 8 oz. fresh snow peas, trimmed 1 red bell pepper, cut into 1" pieces 2 can (8.5oz.each) Mandarin Or- anges in Light Syrup, drained 1½ Tbsp. grated fresh ginger Directions 1. Prepare rice according to package directions; keep warm. 2. Meanwhile, combine pork, 2 Tbsp. soy sauce and 2 Tbsp. corn- starch in a medium bowl. Stir until well coated. 3. Drain pineapple, reserving ½ cup juice. Combine reserved pine- apple juice with remaining 1/4 cup soy sauce and 1 Tbsp. cornstarch in a small bowl. 4. Heat oil in a large skillet over high heat. Add pork; stir-fry 2 min- utes. Add fresh snow peas and bell pepper; stir-fry 2 minutes. 5. Stir soy sauce mixture and add to skillet.. Bring to a boil and cook 2 to 3 minutes or until sauce thick- ens, stirring constantly. Gently stir in oranges, pineapple and ginger; remove from heat, stir in the pine- apple and ginger.
