It also freezes well. Sauté 2 lbs beef stew meat — for quick enchiladas use ground beef. 1 large onion 4 large cloves garlic 1 tbsp olive oil In large pot, on medium heat, add olive oil, chop onion, garlic and sauté. Brown beef stew meat. Add 28oz red chile sauce or red enchilada sauce medium or hot to above. Stir and cover pot. Turn down heat to simmer, stir occasionally, until meat is falling apart — about 2-4 hours. Crock pot would also work. The idea of Pioneer Day took form 67 years ago as a way to raise some money for the local 4-H club and the first one took place the following spring. Long-time participant John Bedford will once again be Grand Marshall in the parade, which begins at 10 a.m. A hearty country breakfast will be available in the park starting at 7 a.m. and the Cowboy Church is at 8 a.m. A snack bar including barbecue hamburgers and steak sandwiches will operate throughout the day. Parade sign-ups are accepted 8:30-9:30 a.m. near the post office. There is no charge to participate in the parade, but minors must have a liability release signed by a parent or guardian. Trophies will be awarded to Best Dressed Working Cowboy and Cowgirl, Most Unique, Best Float, Riding Group and for youngsters 6-12 and for 5 and younger. Parents are urged to accompany young children. In the interest of safety no stud horses are permitted in the parade or any other Pioneer Day events or on the grounds. The parade forms downtown and will cross the Thomas Creek Bridge ending at Simpson Finnell Park, where the trophies will be awarded. The coveted Neva Luce trophy will be awarded at the end of Pioneer Day based on voting of the ground crew.
