Anyone looking for some time- and hassle-saving tips for Thanksgiving dinner would do well to check out a new special airing this week on Cooking Channel. In "Tia Mowry Thanksgiving Special," airing Sunday, Nov. 13, the actress, working mom and home chef invites viewers into her home with family and friends to share favorite holiday recipes, entertaining tips and more. And for her, it's all about preparation. "It's all about finding meals that you can prep ahead of time and that's exactly what I did for this special," she says. "One in particular, the turkey. So the turkey, a lot of people are intimidated by the turkey. They're like 'Oh my gosh! I don't think I could do it.' But my goal is – and especially for this special – is to show people that yes, you can tackle the bird." And for Mowry, the first step is brining – immersing the turkey in a solution of water, salt, sugar and herbs for 24 hours – a process she says produces "a really nice, juicy and flavorful turkey." After that, she lets the bird sit for another 12 hours. Then it's into the oil-less air fryer it goes, covered in peanut oil and creole seasoning. After it cooks for two to three hours, depending on size, it's done. "What it is is infrared heat that is used to circulate around the turkey, and so it's cooking evenly," she explains. "It's giving it a nice, crispy skin and it's also keeping it really nice and juicy. And there's no mess. There's no oil. There's no clean-up. It's crazy how easy this is." To go with the bird, she prepares stuffing in little pumpkins, which can be discarded after the meal. The flower arrangements are premade and then refrigerated. And for dessert, it's pumpkin pecan pies in little jars. The idea is to cook with as few pots as possible, make clean-up easy and thus free the chef from the kitchen. "When I first started cooking Thanksgiving (dinner) for my family ... I would cook things in different pots and then I was left doing the dishes for three hours," she says with a laugh. "Nobody wants to do that." BY GEORGE DICKIE What did you have for dinner last night? "Every single time I come into New York, whether I have someone with me, whether it's my husband or friend or if I'm by myself, I go to this restaurant called Ippudo and it's basically a Japanese ramen restaurant. So what I had was I had ramen and then I had these amazing fried chicken glazed sticky buns from Ippudo. It's so incredibly good." What is your next project? "I'm going to be working on (her regular Cooking Channel series ) 'Tia Mowry at Home,' so I'm going to be going into production for that. I'm going to be going into my third season and I'm really excited." When was your last vacation, where and why? "My last vacation was this past summer in June and I went to Anguilla with my family.
