ThisrecipeforTexasten- derloin tips in red wine mushroom sauce is from The Nolan Ryan Beef & Bar- becue Cookbook. Ingredients 4 pounds beef tenderloin tips, cut into 1-inch chunks cup vegetable oil 1largeyellowonion,diced 4 medium carrots, peeled and cut into inch pieces 8 ounces white mush- room caps, cut in half 1 teaspoon kosher salt 1teaspoonfreshlyground black pepper cup ( lb.) unsalted butter cup all purpose flour 1 cup dry red wine 2 cups beef broth 1 cup sour cream cup heavy cream Directions 1) Heat 5 tablespoons of the oil in a deep saute pan over medium heat. Cook the onion for 1 minute, add the carrots and cook for 1 minute, and then add the mushrooms and cook for 2 minutes. Make sure all the vegetables are tender. Transfer the vegetables to a plate. 2) Add the remaining 3 tablespoons vegetable oil to the still-hot saute pan and add the beef in batches, if necessary. Season with the salt and pepper. Cook, turn- ingoften,for8to10minutes for medium. 3) Stir in the butter until melted. Dust the meat with the flour, and cook until the beef is golden brown, 2 to 3 minutes. 4) Transfer the beef to a plate and tent with foil to keep warm. 5) Deglaze the pan with the red wine, stir and cook until reduced by half. 6) Add the beef broth, sour cream, and heavy cream. Cook for 8 minutes, stirringconstantly,andthen reduce the heat to low and simmer for 10 minutes. 7) Serve the beef with the warm sauce. Serves 8 to 10; prep time: 25minutes;cookingtime:10 to 13 minutes. Double the batch, and serve leftovers for several days; it takes even better the next day! 1 can pinto beans 1 can kidney beans 1 can garbanzo beans 1 can chili beans (or chili con carne) 1 can diced tomatoes (or diced tomatoes with green chili) 1 can chicken broth 2 teaspoons vegetable oil 1 onion, chopped 1 carrot, chopped 2 cloves garlic, minced 2 stalks celery, chopped 1 belled pepper chopped 3teaspoonsgroundcumin 1teaspoongroundoregano Salt and pepper to taste 1. Saute onions, garlic, pepper, celery and carrot in the vegetable oil 2. Add beans (with liq- uid), tomatoes, broth and tomatoes 3. Cook medium heat for hour to 45 minutes Serve over cooked rice the first night when soup is thinner.Leftover soup will be thicker, like chili.
