Don't let anybody fool you – running a restaurant is hard, hard work. There's buying the food, making the menu, hiring and managing staff, advertising, doing the books and putting out fires – literally and figuratively. It truly takes everything a person has and then some to make an eatery successful. And then if you're just getting a restaurant off the ground, that's twice the work, as Carla Hall of ABC's weekday culinary series "The Chew" knows. Earlier this year, the 52-year-old co-host, chef and cookbook author brought her Carla Hall's Southern Kitchen to life in the Red Hook section of Brooklyn, N.Y., And she did it while she was shooting the show. Needless to say, sleep was at a premium. "We actually opened on Memorial Day," she says, "so (the preparations took place) the month leading up to it and then on Memorial Day. So I was doing both and I was just more tired than I have ever been in my life. Twenty-hour days – it was really crazy. ... I was sleeping in my dressing room during our breaks, and you know it wasn't sustainable. I was really tired. Whenever I sat down, I was just falling asleep. But I did that for a month." Now that the restaurant is up and running, Hall reports that everything is going well, customers are coming in the door and she's getting more rest. This is her second location (the first is a kiosk at Brooklyn's Barclays Center) and her star dish is the hot chicken, which is fried chicken tossed in hot spicy oil and spices including cayenne and habanero powder – depending on the customer's desired level of heat. Yes, it can be spicy but Hall maintains it's not hot for the sake of being hot, as some chicken wings can be. "I think people eat spicy food for sport," she says, "but we want it to be enjoyable and not be gratuitously hot and to have some flavor. So we've balanced our spice with fruit, so it's either banana powder or mango powder or pineapple powder. So it's not gratuitously hot." 'The Chew's' Carla Hall forgoes sleep to open a restaurant What book are you currently reading? "I'm reading a couple of things (laughs). I'm reading two books are one time, which is crazy. I just finished Shonda Rhimes' 'A Year of Yes.' And I'm also reading 'The Bell Jar.' " What is your next project? "I'm working on my third cookbook." What did you have for dinner last night? "For dinner, I was on a plane from Vegas so I had the snack pack on the plane ... so it was hummus and cheese and crackers and olives and almonds." When was your last vacation, where and why?
