CalFire/TCFD stress safety Memorial Day weekend This Memorial Day weekend, Cali- fornians everywhere will be recreating in the majestic outdoor areas of the Golden State. In anticipation of the increased outdoor activities, the Cali- fornia Department of Forestry and Fire Protection (CalFire) and the Tehama County Fire Department (TCFD) are urging everyone to exercise caution and emphasize safety this holiday weekend. The lack of rainfall this past winter and spring and the warmer tem- peratures we have been experiencing will dry out the vegetation, contribut- ing to California's elevated risk of wild- fires. Wildfires are not the only danger posed by the outdoors; drownings also dramatically increase during the Memorial Day weekend. In California, drowning is the leading cause of deaths among children under 14, and every year CalFire responds to water rescues all across the state, many of which tragically claim the lives of both adults and children. Memorial Day is a great time to get together with friends and family to enjoy the outdoors. But it is important that everyone understands the dangers that the outdoors pose, and take steps to stay safe and prevent tragedy. CalFire and TCFD would like everyone to remember these important steps this holiday: Camping campfires. 4 beef shoulder center steaks (ranch steak) cut 1" (about 8 ounces each.) Black pepper Salt Citrus-Jalapeno Mojo 3 cups bottled fresh-squeezed orange juice chopped 1/4 cup fresh lime juice 1/2 small red onion, finely 1 small jalapeno pepper, fine- ly chopped 4 cloves garlic, finely chopped 1 tablespoon freshly grated orange peel 1 teaspoon cumin seeds 1. Prepare Citrus-Jalapeno Mojo, combine mojo ingredients in large saucepan; bring to a boil. Boil 15 to 20 minutes or until sauce is reduced to about 1 - 1/2 cups. Strain and discard solids. Place on grid over medium, ash-covered coals. Grill, covered, 11 to 14 minutes for medium rare to medium doneness, turning once. 3. Carve steaks into thin slices. Season with salt, as desired. Drizzle with some cit- rus-jalapeno mojo. Serve with remaining mojo. 4 servings, preparation and cooking time: 40 minutes • Clear away grass, leaves and other debris within a 10-foot perimeter of any campfire. • Have a responsible adult in atten- dance at all times. • Ensure all campfires are com- pletely extinguished before leaving. • When barbequing, never leave the grill unattended.
