This recipe is from East West flank steak wraps is from beefitswhatsfordin- ner.com. 1 beef Flank Steak (1 to 1 1/2 pounds) 2 cups packaged coleslaw mix 1 / 2 cup chopped green onions 1/8 teaspoon salt Dash pepper 4 flour tortillas (8 to 10- inch diameter) Salt and pepper 1/3cup coarsely chopped honey roasted peanuts Dressing: 1 cup rice vinegar 2 tablespoons dark ses- ame oil 1 tablespoon honey 1. Combine dressing in- gredients in large bowl; whisk until well blended. Place beef steak and 3/4 of dressing in food-safe plas- tic bag; turn steak to coat. Close bag securely and mar- inate in 6 hours or as long as overnight. 2. Meanwhile, add cole- slaw mix, 1/2cup green on- ions, 1/8 teaspoon salt and dah of pepper to remain- ing 1/4of dressing in bowl; toss. Set aside. Wrap torti- llas in aluminum foil. 3. Remove steak fro dressing; discard dressing. Place steak on grid over me- dium, ash covered coals. Grill, covered, 11 to 16 min- utes 9 over medium heat on preheated gas grill, 16 to 21 minutes) for medium rare (145'F) to medium (160'F) doneness, turning occasion- ally. A few minutes before steak is done, place tortilla package on grid near edge of grill to heat. 4. Season steak with salt and pepper, as desired; carve diagonally into thin slices. 5. Arrange equal amounts of beef and cole- slaw mixture across center of each tortilla. Sprinkle evenly with 1/3cup chopped peanuts. Fold bottom edge of tortilla up over filling. Fold right and left sides to center, overlapping edges. Makes 4 servings. Total cooking time 35 minutes, plus marinating time. Collision 99W, north of Judy Lane: Two people were taken to St. Elizabeth Community Hospital in a minor injury collision in which Elizabeth McGuire, 30, of Redding attempted to make a u-turn and failed to make sure there was enough clearance to do so. McGuire was going south on 99W and pulled in front of Daniele Garman of Gerber who was going south on 99W approaching McGuire's vehicle. Destiny Harvin, 39, of Cottonwood, a passenger in McGuire's vehicle, was extricated from the right, front passenger seat and flown to St. Eliza- beths for her injuries.
