Cilantro Stuffed Tri-Tip Roast is from a California Beef Council brochure. 1 Beef Tri-Tip (approx. 2 pounds) 1 1/2 cups herb seasoned crou- tons, crushed cheese 3/4 cup shredded Monterey Jack 1/3 cup fresh cilantro, finely chopped 1 egg, slightly beaten 1 green onion, finely chopped 1 1/2 teaspoons lime juice salt and pepper 1/4 cup green jalapeno pepper jelly Preheat oven to 450 degrees. Trim excess fat from meat. Cut a pocket parallel to the surface along long side. Combine croutons, cheese, cilantro, egg, green onion and lime juice; mix well. Pack stuffing into pocket. Skewer open- ing or tie with string. Season exteri- or. Roast in a shallow pan 25 min- utes. Brush with melted jelly. Reduce oven temperature to 350 degrees; roast an additional 5-8 minutes to desired doneness. Allow to stand 10 minutes. Carve against the grain into 1/2 inch slices. Serves 6. Warned Of Unsanitary Conditions Warning that sanitary conditions should be improved in Red Bluff was given by A. L. Conard, speaking in behalf of the local board of health, of which he is a member, at a meeting last night of the city trustees. Mr. Conrad said he had no desire what- ever to appear in the role of an alarmist, but he believed it was best to deal frankly with the situation. — Nov. 8, 1921 Ceremonies will be at 11 o'clock, the time of the Armistice that ended World War I. Elks have a special tie to the event. Gen. "Blackjack" Pershing, who command- ed American forces, was a member of the Elks Lodge, which observes 11 o'clock as the time of remembrance "for their absent brothers." Emblem club has been providing refreshments for spe- cial ceremonies at the cemetery ever since it was estab- lished, as well as making donations to its improvements. Heading this event is Linnea Fletcher, club Americanism chairman. UniSea hiring event A UniSea hiring event will be held 9 a.m. to noon today at the Job Training Center, 718 Main St., in Red Bluff. There will be an orientation and in-person interviews. Applicants can expect a 1-2 hour processing at time of ori- entation and must have interview or they will not be con- sidered for hire.
