There's more than one way to eat a turkey... Here are some other ideas, submitted by City- View readers, for using up your Thanksgiving leftovers: Turkey Shepherds Pie Mix chopped up turkey, any leftover veggies with the leftover gravy (not that there's EVER any leftover gra- vy) and dump it all into a pie pan. Cover with leftover mashed potatoes (you may need to add some milk to make them spreadable) and bake until the top is golden. Creamed Turkey Over Stuffing 3 tbsp butter 3 tbsp flour 1 cup milk ½ cup chicken stock or dissolved bouillon 1/3 cup chopped pimiento salt and pepper 1 tbsp parsley ½ tbsp celery salt 1 cup chopped turkey 1 egg yolk, beaten Leftover stuffing In a large skillet over medium heat, combine butter, flour, milk and stock to make a white sauce. Cook until thickened. Season with salt and pepper to taste. Add parsley, celery salt, chopped pimiento and chicken. Cook for a few minutes. Beat the egg yolk, adding 2 tbsp of milk and pour into the mixture. Cook for only 2 minutes longer. Serve over leftover stuffing. Slow Cooker Potato Soup Add mashed potatoes, milk, cheese, and all the leftovers (ham, corn, green beans — skip the sweet dishes) you want. Let cook for several hours.
