Fruits: Apples – Anti-inflammatory, rich in anti- oxidant nutrients. Grapes – Especially red or black grapes which contain resveratrol, quercetin and beneficial phytonutrients. Pears – Antioxidant, high in dietary fiber and vitamin C and copper. Persimmons – Good source of vitamin C and iron. Vegetables: Beets – Anti-inflammatory, high in fiber. Beet fiber helps increase levels of glu- tathione, which cleanse toxins from cells. Purchase fresh beets with their greens still attached whenever possible and use like spinach or Swiss chard. Turnips – Anti-inflammatory, antibacte- rial; see cabbage above. Winter squash – Acorn, butternut and others are anti-inflammatory; high in vi- tamins A, C, dietary fiber and potassium.
