CattleWomen: Korea An easy, exotic taste of the Far East Daily News Editor Chip Thompson lived in Korea during the late ‘90s and was taught this recipe for bulgogi — a very popular Korean dish for Koreans and westerners alike. Bulgogi can be made with just about any cut of beef with little differ- ence in taste or tenderness thanks to the fragrant marinade. In Korea, it is typi- cally cooked on a butane table-top grill, but is just as good stir-fried in a wok or skillet. Bite-sized pieces are difficult to handle on outdoor grills, though. 1 lb. beef, sliced into 2-inch pieces across the grain, about 1/8 thick. Several leaves of Romaine lettuce; roughly a half-leaf per slice of meat. 2-3 cloves of raw garlic — sliced thin, lengthwise. 4 cups of cooked white rice; look for short, fat grain Japanese rice. Marinade 1 T sesame oil (don’t substitute) 1 T rice wine (can substitute white wine vinegar) 1 T honey 2 T sugar 2 T kiwi juice (about half a kiwi squeezed into bowl, it’s OK to get some pulp and seed in the marinade) 3 T soy sauce 3 T chopped garlic (save time and buy a jar) 3 green onions chopped Mix marinade until honey is dis- solved and add meat, stirring to make sure it is all covered. Place covered in the refrigerator overnight or up to three days. The kiwi juice tenderizes the meat while the other flavors are infused. Cook rice, wash and halve Romaine leaves and slice raw garlic. Pull meat from marinade and stir- fry a couple of minutes on each side. The thin, small pieces don’t take long to reach medium rare. Place meat, rice, Romaine and raw garlic on each dinner plate, or serve family style within easy reach of all diners. Garnish with chopped green end of green onions for color, if desired. Take a half-leaf of Romaine and place a fork full of rice, a sliver of raw garlic and a piece of meat in the mid- dle. Fold the leaf over the contents and pop in your mouth. Traditionally Ssam Jang — a paste made of soybean paste, chilies, garlic and several other ingredients — is added to this preparation of bulgogi, but it is difficult to find locally and the dish does not suffer much from its omission. A relatively balanced meal that appeals to western appetites, no won- der it’s one of the favorites in the proud nation of Korea, which recently landed the 2018 Winter Olympics. The staple kimchi — fermented, pickled cabbage with red chilies, ginger and garlic served at every meal, every day — is available at local supermarkets in the produce section, if you’re looking for the truly authentic Korean dining expe- rience. *Raw garlic is an acquired taste. Start slow and learn to love the burn. Be ready to grab a stick of gum after dinner, though. Railroad ties The numerous railroad projects which are now under consideration in Tehama County will require a great many thousand railroad ties and fears are enter- tained by those in the lumber business that there may be a scarcity of material for building the road. Steel rails have been at a high premium for several years and all kinds of supplies have been held at top-notch figures. When it is considered that about 2,500 ties are required of every mile of railroad work and fully 150 miles of road are planned in this county alone, there will be one-third of a million ties needed here.
