It's often been said that Frito pie was born in New Mexi- co, at the Woolworth's lunch counter in Santa Fe, but history favors Texas. Charles Elmer Doolin of San Antonio founded the Frito Com- pany in 1932, and a cou- ple of years later, Frito pie appeared. This recipe is from the Diner, a once- popular stop (now closed) in Tres Piedras, near Taos, NM. 2 pounds lean ground beef 1 tablespoon garlic powder About 1 teaspoon salt 2 tablespoons flour 1 can (15 oz) black beans (optional), rinsed and drained 3 tablespoons ground dried New Mexico chiles or chili powder About 4 1/2 cups Fritos corn chips (15 oz bag) 6 tablespoons finely chopped onion 1 1/2 cups shredded longhorn cheddar cheese 2 cups finely shredded iceberg lettuce 3/4 cup chopped tomato 1. Cook ground beef, garlic powder and 1 tea- spoon salt in a large pan over medium-high heat, stirring, until beef is crumbly and well- browned, 6 to 8 minutes. 2. Push beef mixture to one side of pan with a large slotted spoon and tilt pan so liquid runs to opposite side. Stir flour into liquid until well blended, then mix with beef mixture. Add 2 cups water, black beans if using, and dried chiles; stir until mixture boils and thickens, about 8 minutes. 3. Spread about 3/4 cup Fritos in each of 6 wide, shallow bowls and sprinkle chopped onion on top of each portion. Divide chili among bowls and top with cheese, lettuce, and tomato. 30 minutes prepara- tion time. Round-Up planning today 11 Days of Round-Up Community Planning Meet- ing 10 a.m. to noon today, Feb. 5 at the Tehama Coun- ty Farm Bureau, 275 Sale Lane in Red Bluff. Please come and be a part of planning Red Bluff's 11 Days of Round-Up. Funds distributed to schools The Redding East Rotary Club distributed $139,662 to more than 50 schools and youth groups at its noon meeting Jan. 15. There were more than 50 guests from 19 organiza- tions and schools in attendance. VIP speakers included Tom Armelino, superintended of schools for Shasta County, and Nichole Bundy, a fourth grade student attending Anderson Heights School. Armelino expressed his gratitude and appreciation for the funds that were presented to his schools that day. If it wasn't for Ducky Derby, the schools would not be able to purchase some of the items they use to help kids stay involved in healthy activities, such as sports and music, he said. Bundy shared her story of how selling tickets for Ducky Derby has helped her and other students stay focused on drug prevention at an early age. According to Nichole, Ducky Derby helps kids remember to stay off drugs. Call Marge Beck at 225-8583 or 941-2245, if you are interested in participating.
