Citizens Oversight Committee for Bond Measure Ato hold meeting As a result of the successful passage of Measure A in March 2002, a Citizens Oversight Committee for Bond Measure A was formed and announced in June 2002. The committee will meet 5:30 p.m. Feb. 7 in the second floor conference room, Room 8204, of the Shasta College Health Science and University Cen- ter, 1400 Market St. The public is welcome to attend this meeting. The purpose of the committee is to inform the public at least annually in a written report con- cerning the expenditure of the bond proceeds. Diabetes Support Group The Diabetes Support Group meets the first Monday of every month at 6:30 p.m. in the Colum- ba Room in the Coyne Center at St. Elizabeth Community Hospital. The Coyne Center is across the road from the main entrance of the hospital with parking both in front and to the side. The next meeting, Feb. 7, will have speaker Chris Christopher of Cottonwood Drugs and Cot- tonwood Health Equipment and Scooters. The topic will be diabetic equipment available. Rib-Eye Steaks with Tomato-Basil Relish from The Sunset Grill. 4 boned beef rib-eye steaks (12 to 16 ounces each) 3 tablespoons balsamic vinegar 3 tablespoons olive oil 1 pound firm-ripe tomatoes 2 tablespoons chopped fresh basil leaves 1 or 2 cloves garlic, minced salt and freshly ground black pep- per 1. Trim any surface fat from the steaks. In a small bowl, mix 1 1/2 tablespoons of the vinegar with 1 1/2 tablespoons of the olive oil. Rub the mixture all over the steaks. Let the steaks stand for at least 15 minutes, or cover and chill up to 4 hours. 2. Meanwhile, core and coarsely chop the tomatoes. In a bowl, mix the tomatoes, basil, garlic, and the remaining balsamic vinegar and olive oil. Season the relish to taste with salt and pepper and set aside until ready to serve. 3. Prepare a grill for cooking over high heat. First, oil the grill rack. If using a charcoal grill, prepare a solid bed of hot coals. If using a gas grill, preheat to high (you can hold your hand 1 to 2 inches above grill level only 2 or 3 seconds). 4. Season the steaks generously with salt and pepper. Lay the steaks on the grill rack. If using a gas grill, close the lid. Cook the steaks, turning once, until medium-rare (cut to test), about 6 minutes on each side. Transfer the steaks to a platter, cover loosely with foil, and let rest 5 minutes. Serve with the tomato-basil relish. Makes 4 to 8 servings. The project became a reality at Metteer through the efforts of the Red Bluff Union School District, Association of California School Administrators and a key parent, Alan Foley. As a result, many of the classes have adopted a col- lege student — or two or three — as pen pals. Many of the adopted college stu- dents were in Red Bluff for the holidays, so they took the time to come in and talk to their adopted classes. Metteer students had the opportunity to ask questions and listen to real life, in the moment, college experi- ences. Metteer students will be able to continue to com- municate with their adopted college students the remain- der of the year via e-mail, Skype and mail.
