A Simpson University for Seniors class might be ideal. These month-long, not-for-credit, no-homework courses meet from 10:20 a.m. to 11:20 a.m. Mondays, Wednesdays and Fridays on Simpson's campus, 2211 College View Drive in Redding. The cost is $95 per course, or $145 for couples registering for the same course. Classes on a variety of topics are offered through May. Two classes are offered in January, starting on the 6th: Political Economics and the World Today: It is well known that governments influence the economy, and in turn the economy affects how societies view their governments. This course will focus on some of the ways that politicians, investors, merchants—and gangsters—look at and behave in our world. Discovering a "Forgotten Book" of the Bible: I & II Chronicles: There are two major histories recorded in the Old Testament. One begins in the book of Joshua and ends with II Kings. Centuries later, a second history was written, often covering the same historical content. This course will compare and contrast the two histories, but focus primarily on the Chronicler: his audience and his presuppositions. The recipe for Super Tenderloin is from Best of Beef III, a collection of 261 prize winning National Beef Cook-Off recipes. 5 pound beef tenderloin roast 3/4 cup butter, divided 1/4 pound blue cheese, crumbled 1 clove garlic, minced 1 tablespoon Worcestershire sauce Radish roses, endive 1. Trim excess fat from beef roast. Melt 1/4 cup butter in small saucepan; brush on roast. 2. Place roast on rack in open roasting pan. Insert meat thermometer so bulb is centered in the thickest part. Do not add water. Do not cover. 3. Roast in 425'F (hot) oven to rare. Roast about 45 to 50 minutes. 4. Remove roast when meat thermometer registers 135'F for rare. 5. Combine blue cheese and remaining butter. Several Detachment 1140 members also serve the families of deceased veterans with an Honor Guard at the Northern California Veterans Cemetery at Igo in Shasta County and other cemeteries in the area. They drill each Monday at 6:30 p.m. at Veterans Memorial Hall, 735 Oak St. in Red Bluff. They are the only veterans organization in the area that practices on a regular basis.
