2A – Daily News – Tuesday, December 28, 2010 Community people&events Writers Forum A writers forum is scheduled for 10:30 a.m. to 12:30 p.m. Saturday, Jan. 8, 2011, in the Memorial Hall of All Saints Episcopal Church, 2150 Benton Drive, Redding, on the corner of Benton Drive and Quartz Hill Road. Two authors with diverse projects come together to explain how they turned their special interests into books. Educator Mike Moynahan will discuss his book, Building an Education Tradition in Shasta County: Insights into the History of the Shasta Union High School District, as Seen through the Eyes of the Super- intendents. Don Lynn, who left the corporate world 15 years ago to begin his quilting adventure, will tell audiences how his two books on quilt design came to life: Design Art Deco Quilts: Mix & Match Simple Geometric Shapes, and Sophisticated Stitches: Designs for Quilting, Applique, Sashiko & Embroidery. Writers Forum, a nonprofit organization founded in 1983, is dedicated to promoting writing as an art and as a profession and to supporting and inspiring writers from all over far northern California. Seeding at the Bend The public is invited to participate in a seeding at the Sacramento River Bend area on Jan. 8. BLM will provide seedlings. CattleWomen’s Corner Rib Roast with Horse- radish Sauce from Confi- dent Cooking with Beef. 1 well trimmed beef rib roast (2-4 ribs), small end, chine (back) bone removed (6 - 8 pounds) salt Seasoning: 2 tablespoons coarsely ground mixed pepper- corns (black, white, green, pink) garlic oil 1 tablespoon minced 1 teaspoons vegetable Horseradish Sauce: 1/2 cup whipping cream 3 tablespoons finely chopped fresh fennel bulb 3 tablespoons finely grated fresh horseradish 1 teaspoon finely chopped fresh fennel fronds 1/8 teaspoon salt 1. Heat oven to 350'F. Insert ovenproof meat thermometer so tip is centered in thickest part of beef, not resting in fat or touching bone. Do not add water or cover. Roast in 350 F oven 2 1/4 to 2 1/2 hours for medium rare; 2 3/4 to 3 hours for medium doneness. 3. Meanwhile prepare Horseradish Sauce. Beat cream in medium bowl just until soft peaks form; do not overbeat. Add fen- nel bulb, horseradish, fen- nel fronds and salt; mix well. Cover and refriger- ate until ready to serve. 4. Remove roast when meat thermometer regis- ters 135 F for medium rare; 150 F for medium. Transfer roast to cutting board; tent loosely with aluminum foil. Let stand 15 to 20 minutes. Temper- ature will continue to rise about 10 F to reach 145 F for medium rare; 160 F for medium. 5. Carve roast into slices; season with salt, as desired. Serve with Horseradish Sauce.
