Castillo is a senior at Los Molinos High School and a great student with a great attitude. Her favorite subjects are chemistry, English and dance. She recently received the Coaches Award for volleyball. Castillo enjoys cooking and cake decorating and wants to pursue a career in the culinary arts. Larry Champion, county superintendent of schools, pre- sented Castillo with a plaque, a letter acknowledging her as the Rotary Student of the Month and a check for $50. This recipe for Beef Stew is from PG&E Spotlight, vol. 3 # 1. 2 pounds lean chuck beef, cut into 2 inch cubes 3 tablespoons vegetable oil 1/3 cup flour 4 garlic cloves, minced 1 yellow onion, diced 1 cup red wine 1 28 ounce can tomatoes, chopped 2 tablespoons tomato paste 1 tablespoon Worcestershire sauce 2 bay leaves 1 1/2 teaspoons oregano 1/2 teaspoon thyme 1/2 teaspoon salt 1/2 teaspoon pepper 4 small white onions, cut into quar- ters 2 carrots, cut into 1/2 inch slices 1 celery stalks, cut into 1 inch slices 1/2 pound mushrooms, cut in half Heat oil in a large heavy pot or Dutch oven. Roll beef pieces in flour and working in batches, brown beef on all sides over medium-high heat, about 10 minutes per batch. Set beef aside. In the same pot, saute garlic and yel- low onion 5 minutes. Pour in wine and stir, scraping brown bits from the bot- tom of the pot, until wine begins to boil. Stir in tomatoes and juice, toma- to paste, Worcestershire sauce, bay leaves, oregano, thyme, salt, pepper and bring to a boil. Reduce heat to low, add beef and its juices to the sauce and simmer stew, covered, for 1 1/ 2 hours, stirring occasionally. Stir white onions, carrots and celery into stew. Cover and cook for 30 min- utes. Add mushrooms, cover and contin- ue cooking for 30 minutes. Uncover and cook 30 more minutes. Remove bay leaves. Taste sauce and add more salt and pepper if desired. Cooking time 3 hours. Makes 6 servings. Members collected over 600 nonperishable food items for some local needy families. The cans were sorted and boxed at the monthly FFA meeting on Nov. 18.The following day, the Red Bluff FFA Officer Team, Rose Petros, Stacy Stroing, Haley Matheson, Wyatt Tausch, John Garrison, and Shelby Murphy, filled the agriculture Trucks with cans and personally delivered them to the families. The officers bought other foods for the families so they can have a Thanksgiving feast. Christina Clayton donated five frozen turkeys to the cause. Thank you to the members who helped make this canned food drive a success.
