Stir in wine, tomato paste, garlic and marjoram. Return beef and bacon to kettle; bring to boil. Reduce heat; cover tightly and simmer 1 hour. Reduce heat; continue simmering, covered, 30 minutes. Stir in mushrooms; continue simmering; covered, 10 to 15 minutes or until beef and vegetables are fork-tender. 5. Remove from heat. Skim fat from cooking liquid, if necessary. Gar- nish with parsley, if desired. Makes 6 servings. Total preparation and cooking time: 2 1 / 4 to 3 3 /4 hours. Red Bluff High School is helping the SRDC by pro- viding the assistance of Matt Pritchard, Natural Resource instructor and Kathy Smith, Workability program instructor and their students. Their recent visits have been very successful in doing the necessary cleanup and preparing of the Garden area for the upcoming Sale. Plants that spent the summer under a shade cloth structure have been groomed and returned to the greenhouse, that was provided to the Center by Louisiana Pacific Foundation. The garden area fall weeding and clean- ing has begun. The RBUHS students provide invaluable assistance to the SRDC while learning through hands-on experiences in propagating, pruning, plant identification (weeding) among other activities. The 2-acre Discovery Garden is open to the public every day and provides a chance to see mature examples of the plants. There are always plants in bloom at the garden and birds and wildlife enjoy this unique habitat that is provided within the Mendo- cino National Forest‚s Red Bluff Recreation Area.
