14 July 2023 Red, White and Blue Caprese Salad Blueberries add a sweet bite to this savor y salad with a nice complement of balsamic vinegar. The star-shaped mozzarella makes it a patriotic-worthy dish. Shape the cheese using a mini cookie cutter. The portions are up to you based on the number of guests at the table. • Blueberries • Cherr y tomatoes (or substitute grape tomatoes, if you prefer) • Mozzarella cheese, still firm enough to cut into stars • Fresh basil torn into small pieces • Balsamic vinegar and olive oil, for the dressing • Salt and pepper to taste Slice firm mozzarella into ¼-inch pieces. Use a small metal star-shaped cookie cutter to gently cut out cheese. Place the cheese throughout your caprese salad for a star-spangled finish. Garnish with balsamic vinegar and olive oil dressing. Star-Spangled Fruit Skewers Perfect for your Fourth of July or Memorial Day celebration, these fruit skewers are refreshing and will not disappoint. In minutes, you will have a festive dessert that both the kids and adults will love. All you need are fresh watermelon and blueberries and as many skewers as you want. Slice watermelon into 1 1/2- to 2-inch- thick rounds; you may leave the rind on at this step to make it easier to cut. Using a star-shaped cookie cutter, cut as many stars as you want, allowing for at least 3 stars per skewer. Set watermelon stars aside. Wash fruit under cool, running water. Thread 2 blueberries on a skewer and push them about 2/3 of the way down the skewer. Add a watermelon star and push down to touch the blueberries. Repeat Steps 1 and 2 twice more until you have 3 watermelon stars and 3 sets of blueberries on the skewer. Adjust fruit as needed so that a watermelon star covers pointy part of skewer. Cover and refrigerate until ready to serve.
