By Erin Rowe So many times in life, we'll come across those happy accolades and celebrations of our good luck and fortune. I truly believe that good things come to those who…try and work hard. Luck is rarely involved in someone's success, be it in the kitchen or even in life. We learn from mistakes, both with soufflés and relationships, knowing the right mix and ingredients to put in the next go around. Abraham Lincoln once said, "ings may come to those who wait, but only the things le by those who hustle." I'm a fan of the mantra, you get out of something what you put into it. But in this time of year, with St. Patrick's shamrock-laced holiday just around the corner, I still like to celebrate the whimsical and fun it oen entails, and that doesn't necessarily mean drinking green beer – although that's an option around March 17. e holiday was originally created with Irish culture in mind, marking the death of their beloved patron Saint Patrick. Traditional meals pop up, such as Corned Beef & Cabbage, as well as just about anything green in the spectrum, such as my Green Goddess Grilled Cheese, Avocado Pesto, or Slow Cooker Green Chile Chicken. So with those parameters in mind, here are a couple compilations of foods that may be fun to try in the kitchen. And as you're cooking and prepping, keep in mind that success with these little goodies won't happen because you found a four-leaf clover in your stockpot. You'll find it through the sometimes hard, but pleasurable act of creating. Estee Lauder agreed, "I never dreamed of success. I worked for it." So let's get to it! The Luck of the Prepared: St. Paddy's Day Favorites If you want to really celebrate St. Paddy's look no further than this recipe, a time-honored classic you can make in a snap. You'll just need the time to wait on the slow cooker, but its well worth it! • 4 lbs. Corned beef brisket (flat or point cut)(with seasoning packet that is included) • 1 white onion, sliced • 2 lbs. red or gold potatoes (peeled or unpeeled) • 3 carrots sliced thick • 2 garlic cloves peeled • 1/2 head cabbage cut into thin wedges • 1 1/2 cup water (or beer, beef stock, or chicken stock) • parsley for garnish • melted butter for potatoes, if desired, at service • horseradish or stone- ground mustard, at service 1. Add the sliced onion to 6 quart slow cooker, along with corned beef and seasoning packet. 2. Add baby potatoes on top of the roast, plus carrots and garlic. 3. Pour over the water. Add cabbage now if you want ultra-tender cabbage. Otherwise wait to add it until the last 2 hours. 4. Place the lid on the slow cooker, and cook on HIGH for 5 hours or LOW for 8 hours total. (Add the cabbage during the last 2 hours). You may have to rearrange things into the pot to get the cabbage to fit (or cut cabbage thinner). 5. Remove the meat onto a cutting board and slice into strips. 6. Serve the meat with potatoes, carrots, and cabbage. 7. Drizzle melted butter over the potatoes if desired. Serve with mustards.
