By Karen Rice Ozark Living e area around Altus, Arkansas might be known as wine country, but the town also is home to some of the finest Cajun cuisine you'll see outside of New Orleans itself. You'll find it at Alligator Ray's, the brainchild and dream of owner Steve Woodard. It opened on December 27, 1999 and if you haven't checked it out, you are missing one of the best eating adventures in the River Valley. "I was born and raised in Clarksville, Arkansas but I've traveled a lot in the South," Woodard began. "I traveled extensively through Louisiana, gathering recipes in the hopes of one day putting together something like a food atlas—so you know what they eat in certain areas and where to go. I also wanted it to be a recipe book." Instead, Woodard bought two vacant buildings in downtown Altus and decided to open a New Orleans style restaurant, Alligator Ray's.
