The updated site, www. rcshof.org, is the culmination of a six-month process that not only puts information at people's fi ngertips, but also streamlines the nomination process of new inductees. "We fi gured that if we were going to be a fi rst-class organization, we needed a fi rst-class website and we certainly have that now," RCSHOF co-chairman Jody Wright said. Strive Marketing of Forest City designed the new website which features pictures and profi les of all the inductees, from the inaugural class of 2017 to the most recent class of 2022. Video footage of select athletes is also available. Visitors to the site can search for a specifi c athlete by name, induction year or by sport. "We wanted to make it easy for people to know who our inductees are," Wright said. "It also helps to avoid duplicate nominations." "We wanted to create a website that could retell and preserve the history of athletes here in Rutherford County," Strive Marketing LLC Founder Mia Chapman added. "Another goal we and the Board had was to make a site that was easily searchable where people could quickly fi nd information on a certain athlete. There are a lot of features on the site that make information easily accessible." The website also features information on the annual T. Max Champion Memorial Golf Tournament and scholarship opportunities, along with links to the RCSHOF social media pages. One of the most important features is that visitors can easily nominate a deserving athlete online. Under the "Nominate An Athlete" tab, visitors can read eligibility requirements as well as complete the nomination process entirely online if they wish. Hardcopy nominations are still welcome. Simply print out and mail a completed form to PO Box 1815 Forest City NC, 28043. Completed forms can also be dropped off at the Callison Recreation Center in Forest City. BISCUIT & SAUSAGE MUSHROOM CASSEROLE For more breakfast recipes, visit Culinary.net. 1 package (16 ounces) pork sausage 1 package (12 ounces) bacon, chopped 8 tablespoons butter, divided 1/2 cup flour 4 cups milk 1 package (8 ounces) mushrooms, sliced 12 eggs 1 can (5 ounces) evaporated milk 1/2 teaspoon salt nonstick cooking spray 1 can (12 ounces) flaky biscuits In pan over medium-high heat, cook pork sausage, stirring frequently. Remove from heat, drain. Set aside. Chop bacon into small pieces. In separate pan over medium-high heat, cook bacon until cooked. Remove from heat, drain. Set aside. In saucepan over medium heat, melt 6 tablespoons butter. Add flour; whisk until smooth. Cook on low heat 1 minute, stirring constantly. Gradually stir in milk. Cook until thickened. Add sausage, bacon and mushrooms; mix well. Set aside. In large bowl, combine eggs, evaporated milk and salt. Using whisk, beat until blended. In saucepan over medium heat, melt remaining but- ter. Add egg mixture; cook until firm but moist, stirring occasionally. Heat oven to 350 F. Spray 13x9 baking dish with nonstick cooking spray. Spoon half egg mixture into bottom of baking dish. Top with half the gravy mixture. Repeat layers. Separate biscuit dough and cut into quarters. Top sauce with biscuit quarters, points facing up. Bake 20-25 minutes, or until mixture is heated and biscuits are golden brown. MAPLE BREAKFAST BRAID Find more breakfast recipes at Culinary.net. 1 package (16 ounces) breakfast sausage 1/4 cup maple syrup 2 eggs, beaten 1/2 cup green onions, sliced 2 Granny Smith apples, peeled and diced 1 1/2 cups dry herb stuffing mix 1 package (17 1/4 ounces) frozen puff pastry, thawed 2 egg whites 1 teaspoon water Heat oven to 400 F. In large bowl, combine sausage, syrup, beaten eggs, green onions, diced apples and stuffing mix. Dust surface with flour; roll out pastry sheet to 12x18 inch rectangle. Transfer pastry to large baking sheet with parchment paper. Spoon half sausage mixture down center of pastry. Make 3-inch cuts down sides of pastry. Fold one strip at a time, alternating sides. Fold both ends to seal in filling. In bowl, beat egg whites and water; brush over pastry. Repeat steps for second pastry sheet. Bake 25-30 minutes rotating pans after baking 15 minutes. ROTISSERIE CHICKEN-BISCUIT CASSEROLE Find more comfort food recipes at Culinary.net. 1 whole rotisserie chicken 8 refrigerated biscuits 1 can (10 3/4 ounces) cream of mushroom soup 1/2 cup milk 1/4 cup sour cream 2 cups frozen vegetables 1/2 teaspoon dried basil 1/8 teaspoon pepper Heat oven to 450 F. Shred rotisserie chicken; set aside. Discard bones. Cut biscuits into quarters; set aside. In saucepan, stir soup, milk, sour cream, chicken, vegetables, basil and pepper. Cook until boiling. Spoon chicken mixture into baking dish. Arrange quar- tered biscuits over filling. Bake 10-12 minutes, or until biscuits are golden brown.
