IngredIents 1 cup sugar 1 cup water 4 cups (12 oz package) fresh or frozen cranberries Optional: 1/2 cup chopped pecans, pinch of orange zest, raisins, cinnamon, or allspice dIrectIons 1. Rinse cranberries and pick out any damaged ones. 2. Boil water and sugar in medium saucepan til sugar dissolves. 3. Add cranberries to pot and return to boil, then lower heat to simmer 10 minutes til they have all burst. 4. Stir in any additional items listed as optional. Can be served hot or room temperature. (16 slices) IngredIents 3 eggs 1 cup sugar 1 cup molasses 1 1/2 tsp ginger 1 1/2 tsp cinnamon 1 tsp cloves 1 cup vegetable oil 2 cups flour 2 tsp baking soda 2 tbl warm water 1 cup boiling water dIrectIons 1. Preheat oven to 350 degrees. Grease a 13 x 9 pan or line with parchment. 2. Mix eggs, sugar, molasses, spices, and oil with a hand mixer til well combined. Si in flour. 3. Combine baking soda and 2 tbl water. Add to batter and mix well. Stir in boiling water til fully combined. 4. Pour batter (it will seem thin) into prepared pan. 5. Bake 40-45 minutes or til toothpick comes out clean. Cool completely and serve with whipped cream. (is would be great served with espresso for November 23 or any time!) PumPkIn sPIce Bread PuddIng (Serves 9-10) IngredIents 1 loaf pumpkin bread (homemade or store- bought), cubed Pudding mixture ingredients: 5 egg yolks 1cup milk 1 cup cream 1⁄2 cup sugar 1 -2 ounces Bourbon (optional) or 1 -2 ounce whiskey (optional) 1⁄4 cup pumpkin puree (can be from can) 1 teaspoon vanilla 1 pinch salt ground cinnamon, nutmeg, and ginger, to taste dIrectIons 1. Preheat oven to 350 degrees. 2. Cube up pumpkin bread and place inside pre-greased 13 x 9 inch pan. 3. Scald 1 cup milk, 1 cup cream and 2 teaspoons sugar. Optional add-on: 1 or 2 ounces of your favorite bourbon, whiskey or rum. 4. Combine 5 egg yolks, 1/4 cup canned pumpkin puree, 1 teaspoons vanilla, pinch of salt, 1/4 teaspoons each of ground cinnamon, nutmeg and ginger and 1/2 cup sugar (minus 2 tsp.) and whisk. 5. Ladle one or two ladles of milk into the egg mixture and whisk to bring egg mixture up without causing curdling, (tempering). Incorporate all of egg mixture into milk and stir, on low to medium heat, with wooden spoon until mixture has body and thickness. Look for a visible streak on your spoon to judge thickness. 6. Take off heat. Pour over bread cubes, which are waiting in a 2-quart buttered pan (approximate size). 7. Bake 1 hour.
