october 16-22, 2022 What's up! 47 try these recipes Hearty and heart-warming Make extra and freeze for busy nights One-Pan White Cheddar Mac and Cheese Ingredients • 16 ounces uncooked elbow macaroni • 2 ½ cups milk • 2 cups water • 1 teaspoon garlic salt • ½ teaspoon salt • ¼ cup margarine • ¼ teaspoon ground black pepper • 1 ½ cups shredded white Cheddar cheese • ½ cup shredded Parmesan cheese, divided • ¼ cup panko bread crumbs • ¼ cup real bacon bits • 1 tablespoon snipped chives Directions 1. Combine macaroni, milk, water, garlic salt, and salt in a Dutch oven on a stovetop over medium-high heat. Bring to a boil, stirring occasionally. Reduce heat to a simmer and cook, stirring frequently so noodles don't stick to the pan, until noodles are soft and most of the liquid has been absorbed, 7 to 10 minutes. 2. Remove pot from heat and stir in margarine and pepper until melted. Stir in Cheddar cheese and 1/4 cup of the Parmesan cheese until melted. 3. Set an oven rack about 6 inches from the heat source and preheat the oven's broiler. 4. Top pasta with bread crumbs, remaining 1/4 cup of Parmesan cheese, and bacon bits. 5. Place Dutch oven under the broiler until topping is lightly browned and crispy, 1 to 3 minutes. Top with chives and serve immediately. Courtesy allrecipes.com Million Dollar Chicken Casserole Ingredients • 1 (10.5 ounce) can cream of chicken soup • 1 cup cottage cheese • ½ cup sour cream • 4 ounces cream cheese, at room temperature • 1 ½ teaspoons Creole seasoning • ½ teaspoon onion powder • 1 teaspoon garlic powder, divided • 5 cups shredded rotisserie chicken • 1 cup finely chopped yellow onion • 1 tablespoon chopped fresh parsley • 30 buttery round crackers (such as Ritz®), crushed • 4 tablespoons unsalted butter, melted • 1 cup shredded mozzarella cheese • 1 teaspoon sliced scallions, or to taste Directions 1. Preheat the oven to 350 degrees F (175 degrees C). 2. Stir together cream of chicken soup, cottage cheese, sour cream, cream cheese, Creole seasoning, onion powder, and 1/2 teaspoon of the garlic powder in a medium bowl until well blended and smooth. Fold in chicken, chopped onion, and parsley until evenly coated. 3. Stir together crackers, melted butter, and remaining 1/2 teaspoon garlic powder in a medium bowl. 4. Spoon chicken mixture evenly into an 11x7-inch or 9-inch square baking dish. Sprinkle evenly with mozzarella then cracker mixture. 5. Place on a foil-lined baking sheet and bake in the preheated oven until crackers are golden brown and edges are bubbly, about 40 minutes. Cool for 10 minutes before serving; garnish with scallions if desired. Cook's Notes: Dish will keep for up to 4 months in freezer, and to reheat thaw overnight or up to 6 hours in refrigerator then bake according to directions. Easy Turkey Tetrazzini Ingredients • 1 (8 ounce) package egg noodles • 2 tablespoons butter • 1 (6 ounce) can sliced mushrooms • 2 cups chopped cooked turkey • 1 (10.75 ounce) can condensed cream of celery soup • 1 cup sour cream • 1 teaspoon salt • 1/8 teaspoon pepper • ½ cup grated Parmesan cheese Directions 1. Bring a large pot of lightly salted water to a boil. Add noodles and cook until al dente, 8 to 10 minutes. 2. Preheat the oven to 375 degrees F (190 degrees C). 3. Meanwhile, melt butter in a large heavy skillet. Drain mushrooms, add to skillet, and cook, stirring, for 1 minute. Stir in turkey, condensed soup, sour cream, salt, and pepper. 4. Drain noodles and place in a 9x13-inch baking dish. Pour turkey mixture evenly over the top. Sprinkle with Parmesan. 5. Bake in the preheated oven until sauce is bubbling, 20 to 25 minutes.
