october 2-8, 2022 What's up! 47 try these recipes Beef + rice = dinner Simple, satisfying favorites with ingredients you probably already have on hand Beef Bulgogi with Dipping Sauce Ingredients • ¼ cup soy sauce • 3 green onions, whites and greens, chopped • 3 tablespoons white sugar • 1 tablespoon vegetable oil • 3 cloves garlic, crushed • 1 teaspoon sesame oil • 1 teaspoon toasted sesame seeds • 2 pounds beef sirloin steak, very thinly sliced Dipping sauce: • 6 tablespoons soy sauce • 2 tablespoons rice vinegar • 2 teaspoons crushed toasted sesame seeds • 1 teaspoon grated fresh ginger root • ¼ teaspoon sweet paprika • ¼ teaspoon cayenne pepper • 1 pinch white sugar Directions 1. Mix 1/4 cup soy sauce, green onions, 3 tablespoons sugar, vegetable oil, garlic, sesame oil, and 1 teaspoon sesame seeds together in a bowl. Add beef to the marinade. Let sit until flavors are well absorbed, at least 30 minutes. 2. Prepare dipping sauce: Mix 6 tablespoons soy sauce, vinegar, 2 teaspoons sesame seeds, ginger root, paprika, cayenne pepper, and 1 pinch sugar together in a separate bowl. 3. Heat a skillet over medium-high heat. Cook and stir beef until firm and lightly browned, 8 to 10 minutes. Serve over rice with dipping sauce. Cook's Note: The longer the beef is marinated, the better. You can also grill or pan-fry this dish. Mexican Beef and Rice Casserole Ingredients • nonstick cooking spray • 1 pound ground beef • 1 yellow onion, diced • 2 cloves garlic, minced • 1 tablespoon taco seasoning • 1 (15 ounce) can black beans, drained • 1 (14 ounce) can fire-roasted diced tomatoes • 1 bunch fresh spinach, trimmed and coarsely chopped • 2 cups low-sodium chicken broth • 2 cups shredded Mexican cheese blend, divided • 1 cup long-grain rice • 1 cup red salsa Directions 1. Preheat the oven to 375 degrees F (190 degrees C). Spray a 9x13-inch casserole dish with cooking spray. 2. Heat a large skillet over medium-high heat. Add ground beef and start to brown, then add onion, garlic, and taco seasoning. Cook until beef is no longer pink, 5 to 7 minutes. Drain and discard any excess oil. Add beans, tomatoes, spinach, chicken broth, 1 cup Mexican blend cheese, rice, and salsa. Pour into the prepared casserole dish. 3. Bake in the preheated oven until rice is cooked, 45 to 50 minutes. Take out of the oven, sprinkle with remaining cheese, and bake until cheese is melted, about 10 minutes more. Grandmaw Cain's Beef Tips and Rice Ingredients • 3 tablespoons butter • 3 tablespoons olive oil • 2 pounds beef stew meat • ¼ cup all-purpose flour • 5 cups water • 2 (6 ounce) packages long grain and wild rice mix • 1 (8 ounce) package sliced mushrooms Directions 1. Melt butter with olive oil in a large heavy pot or Dutch oven over medium heat. Place flour in a shallow bowl and dredge the beef tips in the flour. Brown the beef in the hot butter and oil, stirring often, about 15 minutes. 2. Pour water into the pot and scrape to dissolve browned food bits from the bottom of the pot. Stir in the flavor packets from the rice mix and dissolve; mix in the rice and mushrooms.
