Toss the cucumbers with the salt in a colander, and leave in the sink to drain for 30 minutes. Rinse with cold water, then drain and pat dry with paper towels. 2. Whisk together the sugar and vinegar in a mixing bowl until the sugar has dissolved. Add the cucumbers, jalapeno peppers, and cilantro; toss to combine. Sprinkle chopped peanuts on top before serving. Arugula and Watermelon Salad Ingredients • 2 (5 ounce) packages arugula • ½ large watermelon, seeded and cubed • 1 red onion, sliced • 1 cup crumbled feta cheese • 1 ½ cups balsamic vinaigrette Directions 1. Toss the arugula, watermelon, red onion, and feta cheese with the balsamic vinaigrette in a large bowl. Serve cold. Basil, Tomato and Mozzarella Sandwich Ingredients • 1 (1 pound) loaf Italian bread • 6 fresh basil leaves, chopped • 2 tomatoes, sliced • 4 ounces fresh mozzarella cheese, sliced • 1/8 teaspoon red pepper flakes • ½ cup balsamic vinegar Directions 1. Slice the loaf of bread in half lengthwise. Layer the basil, tomato slices, and mozzarella cheese between the two halves of bread. Cut into four sandwiches. 2.
