Cocktail Beef Bows This beef appetizer, Cocktail Beef Bows, was from a late 1980s National Beef Cook-Off. 1 pound ground beef (85 % lean) 1 package (8 ounces) mixed dried fruit, finely chopped 1/3 cup slivered almonds, toasted 1 1/4 teaspoon ground cinnamon 3/4 teaspoon sugar 1/4 teaspoon each ground nutmeg and salt Sweet Sauce (see below) 1 package (16 ounces) won ton wrappers 3 cups vegetable oil 1/4 cup powdered sugar Parsley sprigs 1. Brown ground beef in large frying pan over medium heat. Pour off drippings. Add fruit, almonds, cinnamon, sugar, nutmeg and salt to frying pan, mixing well. 2. Continue with remaining wrappers until all bows are made. 4. Heat oil in large sauce pan to 350'F. Fry 6 to 8 bows at a time until lightly brown. Remove with slotted spoon and drain on paper towels. 5. Place Sweet Sauce in small serving bowl. Arrange bows on serving platter and dust with powdered sugar. Garnish with parsley sprigs. 4 servings or 50 to 60 appetizers. The Tehama County Police Activities League has provided a number of free programs that offer healthy choices for our youth since 1995. One of the many programs provided has been the Martial Arts Program. Since January, PAL and Alternatives to Violence (ATV) have partnered to provide free self-defense training for women and children which empowers them when facing potentially violent situations. These classes are held 5:30-7 p.m. Wednes- days at the PAL building, 1005 Vista Way next to the Red Bluff Airport. Several of the long-time students from the youth Martial Arts program come in to assist the women and newer kids. Isabelle and P.J.
