Nicholson named to honor roll at Oregon State CORVALLIS, Ore. — Mary Beth Nicholson of Cottonwood made the Scholastic Honor Roll Spring term at Oregon State University. A total of 874 students earned straight-A (4.0). Another 3,306 earned a B-plus (3.5) or better to make the listing. Nicholson, a junior studying pre-civil engineering, earned a 3.5 or better. To be on the Honor Roll, students must carry at least 12 graded hours of course work. Dinner gala for animals North Valley Animal Disaster Group is planning a Dinner Gala for Saturday, Sept. 14, and is seeking donations raffles and auctions. The event will start with cocktails at 5:30 p.m. and dinner at 6 p.m. at the Elks Lodge, 1705 Manzanita Ave. in Chico. Tickets are $40 per person in advance and $45 at the door. An early bird discount price of $35 is available for tickets purchased before Aug. 15. The event will feature a raffle and silent and live auctions. Setting it straight Carne Asada This recipe for Carne Asada is from simplyrecipes.com, and is thinly sliced, grilled beef served in tacos and burritos, after marinating. 2 pounds flank or skirt steak Olive oil Kosher salt and freshly ground black pepper Marinade: 4 garlic cloves, minced 1 jalapeno chili pepper, seeded and minced 1 teaspoon freshly ground cumin seed 1 large handful fresh cilantro, leaves and stems, finely chopped Kosher salt and freshly ground pepper 2 limes, juiced 2 tablespoons white vinegar 1/2 teaspoon sugar 1/2 cup olive oil 1. Lay the flank steak in a large baking dish. Combine marinade ingredients and pour the marinade over the steak. Make sure each piece is well coated. Preheat your grill over medium-high flame. Brush the grates with a little oil to prevent the meat from slicking. Remove the steak from the marinade. Season both sides of the steak pieces with salt and pepper. Grill the pieces for a few minutes only, on each side, depending on how thin they are, until medium rare to well done, to your preference. You may need to work in batches. Remove the steak to a cut- ting board and let rest for 5 minutes. Thinly slice the steak across the grain on a diagonal. Serve with warm tortillas, pico de gallo (fresh tomato salsa) and chopped avocados. Serves 4 to 6.
