october 10-16, 2021 What's up! 47 Casserole classics try theserecipes Easy to make, easy to serve, budget-stretching meals Chicken Divan Ingredients • 2 ½ cups cooked chopped broccoli • 2 cups shredded, cooked chicken meat • 2 (4.5 ounce) cans mushrooms, drained • 1 (8 ounce) can water chestnuts, drained (Optional) • 2 (10.75 ounce) cans condensed cream of chicken soup • 1 cup mayonnaise • 1 teaspoon lemon juice • ¼ teaspoon curry powder • 1 tablespoon melted butter • ½ cup shredded Cheddar cheese Directions 1. Preheat oven to 350 degrees F (175 degrees C). Grease a 3-quart casserole dish. 2. Arrange cooked broccoli in prepared baking dish. Arrange chicken over broccoli. Add mushrooms and water chestnuts (see Cook's Note). 3. In a medium bowl, combine the soup, mayonnaise, lemon juice, curry powder, and melted butter. Mix together and pour sauce mixture over chicken and vegetables. Sprinkle cheese on top and bake in the preheated oven until the casserole is bubbly and the cheese is golden brown, 30 to 45 minutes. Cook's Notes: You can substitute fresh mushrooms for the canned, if desired: simply cook one 8-ounce package of sliced mushrooms with a tablespoon of olive oil or vegetable oil in a skillet until tender, then proceed with recipe. Spinach Enchiladas Ingredients • 1 tablespoon butter • ½ cup sliced green onions • 2 cloves garlic, minced • 1 (10 ounce) package frozen chopped spinach , thawed, drained and squeezed dry • 1 cup ricotta cheese • ½ cup sour cream • 2 cups shredded Monterey Jack cheese • 10 (6 inch) corn tortillas • 1 (19 ounce) can enchilada sauce Directions 1. Preheat the oven to 375 degrees F (190 degrees C). 2. Melt butter in a saucepan over medium heat. Add garlic and onion; cook for a few minutes until fragrant, but not brown. Stir in spinach, and cook for about 5 more minutes. Remove from the heat, and mix in ricotta cheese, sour cream, and 1 cup of Monterey Jack cheese. 3. In a skillet over medium heat, warm tortillas one at a time until flexible, about 15 seconds. Spoon about 1/4 cup of the spinach mixture onto the center of each tortilla. Roll up, and place seam side down in a 9x13 inch baking dish. Pour enchilada sauce over the top, and sprinkle with the remaining cup of Monterey Jack. 4. Bake for 15 to 20 minutes in the preheated oven, until sauce is bubbling and cheese is lightly browned at the edges. Easy Upside-Down Pizza Casserole Ingredients • 1 ½ pounds lean ground beef • 1 (15 ounce) can pizza sauce • 1 (4 ounce) can sliced mushrooms, drained (Optional) • ¼ cup sliced pitted ripe olives • 1 cup shredded mozzarella cheese, or more to taste • 1 (10 ounce) can refrigerated biscuit dough Directions 1. Preheat the oven to 400 degrees F (200 degrees C). 2. Heat a large skillet over medium-high heat. Cook and stir beef in the hot skillet until browned and crumbly, 5 to 7 minutes. Drain and discard grease. Stir in sauce, mushrooms, and olives. Cook and stir until heated through, about 2 minutes more. Transfer mixture to a 2-quart rectangular baking dish. Sprinkle mozzarella cheese on top of the casserole. 3. Flatten each biscuit with your hands and arrange on top of the cheese. 4. Bake in the preheated oven until biscuits are golden, 15 to 17 minutes. Cook's Notes: Feel free to add additional toppings to the casserole (like pepperoni or onions).
