White Bean and Corn
Waffles
2 cups dried cooked white beans
2 cups buttermilk
3 eggs
1 cup flour
½ cup corn meal
¼ teaspoon baking powder
1 teaspoon salt
1 teaspoon cumin
1 cup fresh corn cut off the cob
½ cup chopped scallions
Puree white beans in a food processor; transfer to a batter bowl and stir in
the rest of the ingredients. Add 1 cup
fresh corn and ½ cup chopped scallions.
Bake in a pre-heated, lightly-buttered
waffle iron until golden and cooked
through.
You may make well before hand
and store wrapped under refrigeration
until you're ready to serve; reheat in a
350-degree oven for 8 minutes just before plating.
Bourbon Syrup
¼ cup Jack Daniel's
1 cup molasses
6 Tablespoons whole grain mustard
Mix all ingredients together; use to
glaze the roasting pork and to garnish
each plate.
Corn and Tomato Relish
2 cups sweet corn
¼ cup diced red onion
½ cup sliced green onions
1 teaspoon chopped garlic
¼ cup diced red bell pepper
2 Tablespoons chili sauce
3 Tablespoons Cilantro, chopped
¼ cup olive oil
½ teaspoon cumin
3 Tablespoons sherry vinegar
½ teaspoon salt
½ teaspoon black pepper
Mix all ingredients together; season
to taste with salt and pepper.
