Hey kids! Our recipes this month come to us from our friends at Apple Seeds Teaching Farm in Fayetteville. They're the recipes that kids like you made at their "Farm to Table" program (story on page 26.) You can do it too!! Time to make something fresh and yummy!! www.appleseedsnwa.org cucumber Sushi prep time: 20 Min Serves: 4 IngredIentS dip • ¼ cup soy sauce • 1 Tbsp rice wine vinegar • 1 Tbsp olive oil • ½ tsp toasted sesame oil • ½ tsp honey • Juice from ¼ of a lime • 1 pinch garlic powder • ¼ tsp red pepper flakes (optional) Sushi • 2 cucumbers • ½ cup cooked sushirice or short- grain brown rice, cooled • ¼ bell pepper cut into thin slices (julienned) • 1 avocado • ½ carrot julienned InStructIonS 1. To make the dipping sauce mix everything together in a jar and set aside. 2. Slice off both ends of the cucumber and then cut the cucumber into 2 inch sections. 3. Remove the center of the cucumber using an apple corer. 4. Slice your veggies into very thin 2 inch strips (this is called julienne) and add some of each to the center of the cucumber.Then stuff with rice to fill the hole, pushing the rice down to ensure the cucumber is fully stuffed. 5. Cut into sushi slices and serve. carrot cupcakes prep time: 15 mins cook time: 20 min Serves: 12 IngredIentS • 1 cup whole wheat flour • 2/3 cup all-purpose flour • 1 ½ tsp baking soda • ½ tsp salt • 2 tsp ground cinnamon • ¼ cup olive oil • 2/3 cup honey • ½ cup unsweetened apple sauce • 2 eggs • 1 tsp pure vanilla extract • 1 ¾ cups finely grated carrots • 2 tsp fresh ginger, grated (or ¾ tsp powdered ginger) InStructIonS 1. Preheat oven to 350°F. 2. Line a muffin tin with 12 paper liners 3. In a large bowl, combine flour, baking soda, salt, and cinnamon. 4. In a separate bowl combine olive oil, honey, apple sauce, eggs, vanilla extract, carrots, seeds, raisins and ginger. Stir to combine. 5. Add the wet ingredients to the dry ingredients and stir just until mixture is combined. Be careful not to over mix. 6. Fill the muffin tins about half way with the batter. 7.
