Hey kids! Here are some recipes courtesy of our friends at Apple
Seeds Teaching Farm in Gulley Park in Fayetteville. It's a place
where people can learn to plant a seed, watch it grow and then
harvest it to make a delicious snack or meal. Take advantage of
summer's fresh fruits and veggies and make something yummy!

simple baked squash
prep time: 5 Min cook time: 10 min serves: 3
IngredIents
• 2 ounce yellow squash or zucchini
• 2 tsp olive oil
• 1/4 tsp garlic powder (optional,
but delicious)
• 1 pinch of salt
• 1 pinch of pepper
InstructIons
1. Preheat the oven to 400° F
2. Cut the squash in half lengthwise, then into 1/4 inch thick half
circles..
3. Add the squash to a bowl, add the olive oil and toss to coat all of
the squash.
4. Add the seasonings and mix it all together.
5. Place the squash on a baking sheet in an even layer. They will get
soffy if they are overlapping.
6. Bake for about 10 minutes or until they are golden brown on the
bottom.
radish pickles
prep time: 5 Mins pickling time: 1-7 days Makes 1 quart
IngredIents
• 10 radishes, washed & trimmed
• 5 garlic cloves, smashed
• 2 cups white vinegar
• 1 tsp salt
• Pinch of black pepper
• 2 tsp honey
• 3 sprigs fresh dill (optional)
• Fresh water to fill
InstructIons
1. Cut radishes in quarters or in thin slices.
2. Combine all ingredients into a clean
1 quart glass jar.
3. Add enough water to cover radishes.
4. Shake until salt and honey are dissolved.
5. Keep in fridge for 24 hours before
enjoying. They will keep in the fridge for 1 month.

beet the Heat
popsicles
prep time: 10 Mins
cook time: 6 hours
serves: 8
IngredIents
• 1/2 cups of strawberries
• 1 Tbsp water
• 1 Tbsp shredded beets, packed
• 5-10 mint leaves
InstructIons
1. Remove the tops from the
strawberries and cut
the berries in half.
2. Shred the beet.
3. Rip the mint leaves in half.
4. Add all ingredients to a blender and
blend until smooth.
5. Add mixture to popsicle molds.
Leave about 1/2 inch of space
from the top because the mixture
expands when it freezes.
6. Leave in the freezer for
4-12 hours or until frozen.
7. Enjoy on a hot day!
