Salad in a Jar
Layer spinach, beets, carrots, garbanzo beans or any other
veggies you like in a canning or jam jar and top with homemade
dressing for a portable picnic salad!
IngredIents
• 1 cup baby spinach leaves or other greens
• 1 cup shredded beets
• 1 cup garbanzo beans (chickpeas), drained and rinsed
• 1 cup shredded carrots
• 5 half-pint canning jars with lids and rings
• ¼ cup extra-virgin olive oil
• ¼ cup apple cider vinegar
• 1 tablespoon Dijon mustard
• 2 teaspoons honey
• salt and ground black pepper to taste
dIrectIons
1. Layer 1/4 cup spinach, 1/4 cup beets, 1/4 cup garbanzo
beans, and 1/4 cup shredded carrots in each of 4 jars.
2. Combine olive oil, vinegar, mustard, honey, salt, and pepper
in the remaining jar; place lid on jar. Shake until dressing is
evenly combined. Pour 1/4 the dressing over each salad.
Ranch Roll-Ups
IngredIents
• 2 (8 ounce) packages cream cheese,
softened
• ¾ avocado - peeled, pitted, and mashed
• 1 (1 ounce) package ranch salad dressing
mix
• 3 green onions, chopped
• ½ green bell pepper, chopped
• 11 (8 inch) flour tortillas
• 22 slices thinly sliced ham or turkey
dIrectIons
1. Beat cream cheese, avocado, and salad dressing mix in a small bowl; stir in
onions and bell peppers. Spread 3 tablespoons cream cheese mixture over
each tortilla; top each tortilla with two slices ham.
2. Roll tortillas up tightly and wrap in plastic wrap; refrigerate until firm, about
30 minutes. Unwrap and cut into 3/4-inch slices.
Kid-Friendly Fruit Salad
IngredIents
• Fresh pineapple, cut into bite-size chunks
• 1 orange, peeled and cut into bite-size pieces
• Red apple, cut into bite-size pieces
• Seedless red or green grapes, halved
• 2 cups strawberry yogurt
dIrectIons
1. Stir pineapple, orange, apple, and grapes together in a bowl.
2. Pour yogurt over the top and stir to coat completely.
