FEBRUARY 28-MARch 7, 2021 WhAt's Up! 47 Replace starchy carbs with deliciously disguised cauliflower Undercover cauliflower try theserecipes Cauliflower Fried 'Rice' Ingredients • 2 cups frozen peas • ½ cup water • ¼ cup sesame oil, divided • 4 cups cubed pork loin • 6 green onions, sliced • 1 large carrot, cubed • 2 cloves garlic, minced • 20 ounces shredded cauliflower • 6 tablespoons soy sauce • 2 eggs, beaten Directions 1. Stir peas and water together in a saucepan; bring to a boil, reduce heat to medium-low, and cook and stir until peas are tender and heated through, about 5 minutes. Drain and discard water. 2. Heat 2 tablespoons sesame oil in a wok over medium- high heat. Cook and stir pork in hot oil until lightly browned on all sides and cooked through, 7 to 10 minutes. Transfer meat to a plate. 3. Heat remaining 2 tablespoons sesame oil the wok. Saute green onions, carrot, and garlic in hot oil until just softened, about 5 minutes. Add cauliflower; cook and stir until cauliflower had a tender but firm to the bite, 4 to 5 minutes. 4. Stir pork, peas, and and soy sauce into cauliflower mixture and stir-fry until mixture is hot and slightly browned, 3 to 5 minutes. 5. Move pork-cauliflower mixture to one side of the wok; pour beaten eggs onto empty side. Scramble eggs until cooked through, 3 to 5 minutes; stir cooked eggs into the pork-cauliflower mixture, breaking up any large chunks. Chef John's Cauliflower Pizza Crust Ingredients • 1 head cauliflower, cored and separated into florets • ½ cup water • ½ teaspoon salt • 2 ounces fresh goat cheese • ½ ounce finely grated Parmigiano-Reggiano cheese • 1 large egg • 1 pinch cayenne pepper, or to taste Directions 1. Preheat oven to 400 degrees F (200 degrees C). Line a baking sheet with parchment paper. 2. Puree cauliflower in a food processor until finely ground. 3. Cook ground cauliflower, water, and salt together in a skillet over medium-high heat until fragrant and most of the water evaporates, 5 to 6 minutes. Cool completely. 4. Transfer cauliflower to the center of a clean dish towel. Wrap and squeeze tightly to remove all excess moisture. You should have about 1 1/2 cups cauliflower pulp. 5. Stir cauliflower, goat cheese, Parmigiano-Reggiano cheese, egg, and cayenne pepper together in a bowl to form a soft dough. Gather dough into a ball and place in the center of the prepared baking sheet. Press dough into circle about 1/4-inch thick. 6. Bake in the preheated oven until golden brown and set, about 40 minutes. Cool and turn crust over before topping. Cauliflower Hash Browns Ingredients • ½ head cauliflower, grated • ½ cup shredded extra-sharp Cheddar cheese • 1 large egg, beaten • ¼ cup panko bread crumbs • 1/8 cup chopped green onion • ¾ teaspoon salt • ¼ teaspoon ground black pepper • ¼ teaspoon smoked paprika • 1 tablespoon extra-virgin olive oil Directions 1. Place grated cauliflower, Cheddar cheese, egg, panko, green onion, salt, pepper, and paprika in a large bowl. Mix until combined; mixture will be very crumbly. 2. Heat olive oil in a large skillet over medium-high heat until hot. Scoop up some of the cauliflower mixture using an ice cream scoop; pat into a flat patty. Gently place patty in the hot oil; reduce heat to medium. Repeat with remaining mixture. Cook until a golden brown crust forms, about 5 minutes per side. Remove to a platter and serve immediately.
