More than a crop, corn is the primary staple and valued heirloom of all indigenous Mexican culture as well as a foundational element in the national identity. Nixta Licor de Elote, a next-level liqueur that is inspired by tradition but rooted in innovation, was created to honor that history. Nixta Licor de Elote is made from the season's best, most tender crops of ancestral cacahuazintle corn, grown near the distillery at an altitude of more than 7,000 feet above sea level. It's produced in two stages: Sweet corn is macerated in an exquisite corn distillate to extract all of its delicate flavor and then sweetened with clarified sweet wort that's also produced from ripe, nixtamalized cacahuazintle kernels. The elaborate process results in a versatile liqueur that's true to its origins, with aromas and flavors of toasted corn, vanilla, and caramel as well as a silky, luxurious texture and a finish of roasted nuts and dried fruit. If there's such a thing as a liqueur of contemplation, Nixta may be it—but while it shines served neat, it also elevates cocktails like the Maíz Margarita with reposado tequila, agave syrup, lime juice, and bitters.
