7 The Land Down Under might not be the first place you associate with craft spirits today—but thanks to STARWARD, it may well be tomorrow. STARWARD's whiskies reflect the capricious yet captivating qualities of Australia's Garden City, Melbourne, where they're made and aged in oak that previously held red or fortified wine from area producers. "Melbourne's highly reactive climate is our secret weapon in maturation," says Marketing Director Tess Syriac. "The temperature in Melbourne can fluctuate up to 12.5 degrees Celsius within a day, which gives our barrels limited time to rest. We like to think that they're some of the hardest-working barrels in the world." Their effort is paying off. Inspired by his city's diverse culinary scene, STARWARD founder David Vitale developed a passion for gastronomy that sparked his desire to create approachable, even food-friendly whiskies; the current range is a paragon of versatility, including the blended Two-Fold and the single malts Nova and Solera. (The latter is made by the complex process for which it's named, most famous in the Sherry-producing region of Jerez.)
