Richer than tequila and less smoky than mezcal, Avila must be made from 100% agave and produced in the Morelos region, located in south-central Mexico at 3,000 feet above sea level. Revel's agave plants, which are hand-harvested year-round, grow in the fertile soil surrounding El Popocatépetl, Mexico's most active volcano. Once the heart of the agave plants—known as the piñas— are harvested, tequila producers would steam them in ovens while mezcal producers would roast them in large brick pits. Revel opts for both methods, steaming some of the piñas and roasting the others for 72 hours on volcanic rock. The combined and distilled result is a smooth, subtly smoky spirit that defies easy categorization. Revel currently produces three expressions: the unaged Revel Blanco; Revel Reposado, aged 12 months in American oak whiskey barrels; and Revel Añejo, aged 24 months in charred new French oak barrels. St. George Spiced Pear Liqueur ✘ 1 egg white Add ingredients to a shaker and dry shake vigorously. Add ice and shake again before double straining into a coupe or sour glass. Garnish with grated cinnamon.
