Aperol ✘ ½ oz. lemon juice ✘ 1 oz. soda water ✘ Sparkling wine to top Add first four ingredients to a shaker with ice and briefly agitate to mix. Strain into an iced Collins glass. Add soda water and fill remaining space with sparkling wine such as Cava.
