11 The New Malt Order : AUCHENTOSHAN Founded on the outskirts of Glasgow in 1823, Auchentoshan—which translates from the original Gaelic as "Corner of the Field"—has a long and formidable history of whisky making. But that's not to say the distillery is stuck in the past. On the contrary, it strives to establish what it calls a New Malt Order with every drop it produces. Triple-distilled to at least 80 proof from unpeated, painstakingly milled barley, Auchentoshan's lineup runs the gamut of single malt Scotch styles. Two expressions form its core: American Oak, which matures in ex- bourbon barrels to yield aromas and flavors of vanilla and coconut before a crisp, subtly spicy finish, and Three Wood, which rests in Oloroso and Pedro Ximénez Sherry as well as bourbon casks—resulting in a smooth profile of dried fruit, hazelnuts, and butterscotch whose oaky sweetness lingers. But Auchentoshan produces several other Scotches varying in age and wood treatment, including the signature 12 Year Old, noted for its nose of crème brûlée, citrus, and green leaf and its gingery finish, with nuts and citrus shining through every sip.
