JANUARY 17-23, 2021 WhAt's Up! 47 All-in-one meals make cooking and clean up a breeze Sheet pan suppers try theserecipes Crispy Rosemary Chicken and Fries Ingredients • 8 chicken thighs • 6 small red potatoes, quartered • ½ cup extra-virgin olive oil, or as needed • 1 tablespoon chopped fresh rosemary • 1 ½ teaspoons chopped fresh oregano • 1 ½ teaspoons garlic powder • salt and pepper to taste Directions 1. Preheat the oven to 375 degrees F (190 degrees C). 2. Place chicken and potatoes into a large bowl. Pour olive oil over them, and stir to coat. Scatter the chicken and potato pieces in a large baking dish, or cookie sheet with sides. Sprinkle with rosemary, oregano, garlic powder, salt and pepper. 3. Bake for 1 hour in the preheated oven, uncovered. Baste during the last 15 minutes for extra crispness. Earth, Sea and Fire Salmon Ingredients • 2 tablespoons olive oil • 4 (8 ounce) salmon fillets • 4 medium potatoes, peeled and sliced • 2 large red onions, sliced into rings • 1 jarred roasted red pepper, drained and cut into strips • 8 ounces portobello mushrooms • 1 tablespoon fresh lemon juice • salt and pepper to taste • 1 teaspoon sesame oil Directions 1. Preheat the oven to 350 degrees. Coat the bottom of a 9x13 inch baking dish generously with olive oil. 2. Arrange potato slices in a layer on the bottom of the baking dish. Season with a little salt and pepper. Place a layer of onions over the potatoes, then a layer of roasted peppers, seasoning each layer with salt and pepper as desired. Place salmon fillets over the vegetables in the dish, and season with lemon juice, salt and pepper. Place whole mushrooms over the fillets, and drizzle them with sesame oil. 3. Bake for 45 minutes in the preheated oven. Fish should flake easily with a fork, and potatoes should be tender. Sheet Pan Smoked Sausage, Apple, and Root Veggie Dinner Ingredients • 8 ounces baby carrots • 8 ounces Brussels sprouts, halved lengthwise • 1 small red onion, peeled and cut into 8 wedges • 3 tablespoons olive oil • 2 teaspoons chopped fresh rosemary • 1 teaspoon kosher salt • ½ teaspoon black pepper • 1 (12 ounce) package Smoked Sausage, cut in 1/2" bias- cut slices • 1 medium Honeycrisp apple, cut into 12 wedges • 1 lemon, halved • 2 tablespoons chopped parsley Directions 1. Place a large baking pan in oven. Preheat oven to 450 degrees F. 2. Toss carrots, Brussels sprouts, and onion with oil, rosemary, salt, and pepper in a large bowl. Arrange vegetable mixture and sausage on the preheated pan in a single layer. Bake in the preheated oven until just tender, about 20 minutes. 3. Preheat broiler to high. Add apple to pan; broil until apple is tender and vegetables are slightly caramelized, 5 to 6 minutes. Remove pan from oven. Squeeze lemon over pan and sprinkle with parsley.
