february 2-8, 2020 What's up! 47 try these recipes First-string snacks Football watch party fare that scores Mini Buffalo Chicken Egg Rolls Ingredients • ½ pound cooked chicken breast • 1/3 cup diced celery • 2 ounces blue cheese • 2 ounces cream cheese • 1 tablespoon Louisiana-style hot sauce • salt • freshly ground black pepper • cayenne pepper • 14 wonton wrappers, or more as needed • 1 egg • 1 tablespoon water • oil for frying Directions 1. Dice chicken into small cubes. Transfer to a mixing bowl. Add celery, blue cheese, cream cheese, and hot sauce. Season with salt, black pepper, and cayenne pepper. Mix with a spoon until filling is well combined. 2. Beat egg and water together. Brush egg wash over the edges of 1 wonton wrapper. Place a heaping tablespoon of filling near one edge. Spread out with your fingers, leaving a 1/2-inch border. Roll edge up over filling. Crimp in both edges and roll over once more. Fold in about 1/4 inch of dough on either side to seal the ends. Apply more egg wash on top and continue rolling. Place on a plastic-lined baking pan. Repeat with remaining wonton wrappers and filling. 3. Fill a skillet with enough oil to reach halfway up the egg rolls. Heat to 350 degrees F in a skillet over medium heat. Add a batch of egg rolls; fry until browned and crispy, about 2 minutes per side. Drain on a paper towel-lined plate. Fry remaining egg rolls. Big Game Sunday Chili Dip Ingredients • 1 (14 ounce) can black beans, drained • 1 (8 ounce) jar salsa • 1 pound ground turkey • salt and ground black pepper to taste • 1 (8 ounce) package shredded Mexican cheese blend Directions 1. Stir black beans and salsa together in a slow cooker set to Low. 2. Break ground turkey into a skillet over medium heat; season with salt and pepper. Cook and stir turkey until completely browned, 5 to 7 minutes. Stir turkey into the black bean mixture. Sprinkle cheese over the turkey and bean mixture. 3. Cook mixture on High for 1 hour. Reduce to Low setting to keep dip hot while serving. Bacon-Wrapped Jalapeño Poppers Ingredients • 1/2 cup cream cheese • 1/2 cup shredded sharp Cheddar cheese • 12 jalapeño peppers, halved lengthwise, seeds and membranes removed • 12 slices bacon Directions 1. Preheat oven to 400 degrees F. Line a baking sheet with aluminum foil. 2. Mix cream cheese and Cheddar cheese together in a bowl until evenly blended. Fill each jalapeño half with the cheese mixture. Put halves back together and wrap each stuffed pepper with a slice of bacon. Arrange bacon-wrapped peppers on the prepared baking sheet. 3.
