WhatBackyard barbecue to eat …
1½ teaspoons ground cumin ½ teaspoon salt 6 (6-ounce) tilapia fillets 2 tablespoons olive oil 1 teaspoon grated lime rind 2 tablespoons fresh lime juice
Grilled Tilapia Tacos California cuisine has finally caught up to Carolina grills. Pass up those patties and
head to the seafood counter instead. It’s hard to go wrong with any type of white fish and your favorite seasonings, but here is our take on fish tacos:
Vegetable cooking spray 12 tortillas toasted* 1 avocado cubed 2 Roma tomatoes diced 1 small mango cut 1 bunch cilantro
nCombine first two ingredients. nRub seasoning mixture evenly over fillets. nStir together oil, grated rind and juice; rub over fillets. nCoat grill with cooking spray. nGrill over medium-high heat 3 minutes on each side or just until fish begins to
flake with a fork. nCut fish into bite-size pieces and gently toss with avocado, tomatoes, mango
and fat-free sour cream, if desired. nSpoon 2 to 3 tablespoons mixture into tortillas and top with cilantro.
*We used flour tortillas but whole-wheat or corn tortillas may be substituted
